Sitting down to a yummy family meal doesn’t mean having to spend hours slaving over the kitchen sink afterwards. Using only one pot, pan or dish, these recipes are simple to make – and the clean-up afterwards is just as easy. Perfect for busy midweek meals and carefree weekends, they’re fabulously fuss-free.

Fragrant pork laksa with rice noodles

Ready in 50 minutes | Serves 4 | DF

This dish is remarkably easy to prepare despite the lengthy ingredient list as the meatballs are cooked directly in the soup in much the same way as dumplings in a stew.

CURRY PASTE

4 cloves garlic
4 long green chillies, seeds removed
3 Tbsp chopped lemongrass (about 3 stalks)
5cm piece fresh ginger, peeled
1 large onion, coarsely chopped
1 tsp ground turmeric
2-3 Tbsp vegetable oil

SOUP

½ Tbsp vegetable oil
400g can coconut milk
1 litre chicken stock**
2 Tbsp soy sauce
1½ Tbsp fish sauce
3 makrut lime leaves
1 star anise
1 cinnamon stick
1 tsp brown sugar
300g trimmed green beans
300g rice stick noodles
Coriander leaves, to garnish
Cashews, toasted, to garnish (optional)

MEATBALLS

2 slices bread**
500g pork mince
2 Tbsp chopped lemongrass (about 2 stalks)
⅓ cup sweet chilli sauce
3 Tbsp soy sauce
½ cup chopped coriander
