HAM, GREEN ONION & ZUCCHINI FRITTERS

PREP + COOK TIME 20 MINUTES SERVES 4

250g red grape tomatoes
1 teaspoon balsamic vinegar
1½ tablespoons extra virgin olive oil
1 small zucchini (90g)
1 cup (135g) gluten–free self–raising flour
¾ cup (180ml) milk
250g shaved ham, chopped finely
2 green onions, sliced thinly
1 large avocado (320g), chopped coarsely

1 Preheat oven to 200°C/180°C fan.

2 Place tomatoes on an oven tray; drizzle with vinegar and 1 teaspoon of the oil. Season. Roast for 15 minutes or until tomatoes just soften.

3 Grate zucchini. Using a clean tea towel, squeeze excess moisture from zucchini.
