Extra green breakfast eggs

» SERVES 4

1 tbsp coconut oil, melted
100g button mushrooms, sliced
1 spring onion, finely sliced
1 tsp paprika
1 tsp ground cumin
¼ tsp cinnamon
¼ tsp chilli flakes
1 tsp tomato paste
500g jar or 2 cans whole tomatoes
3 cups chopped greens (spinach, kale, silverbeet)
4 eggs
¼ cup chopped parsley or coriander

1 Preheat the oven to 160ºC.

2 Heat a cast iron pan over a medium heat, add the coconut oil, mushrooms and spring onions, and fry until soft.
