CHEF CODY CARROLL has kept himself quite busy since being named a Chef to Watch in 2014. At that point, he had ended his reign as King of Louisiana Seafood and was running Hot Tails, a popular crawfish joint in New Roads. He and his wife, Samantha (a trained chef herself and now executive director of the Louisiana Seafood Promotion and Marketing Board), were about to open a restaurant in New Orleans’ Warehouse District, and from there, they shot a series for the Food Network.
