Winner, winner, chicken dinner!
PAELLA POTJIE
Luxurious and lovely
This fragrant potjie is one of my favourites – with or without the prawns.
Ingredients (Serves 8)
1-2 chorizo sausages, sliced
3 tablespoons olive oil
4 chicken breast fillets, cut into strips
Salt and freshly ground black pepper to taste
1 red chilli, finely chopped
1 teaspoon turmeric
2 garlic cloves, crushed
1 green pepper, seeded and sliced
1 red pepper, seeded and sliced
2 cups of risotto rice (such as arborio)
1 can (410 g) chopped tomato and onion
4 cups stock
1 bay leaf
12 prawns, headed and deveined
Lemon wedges and fresh parsley to serve
Here’s how
the chorizo in the oil until crisp. Add the chicken and fry until golden brown. Season the mixture with salt and pepper and add the chilli, turmeric and garlic. Add the peppers and fry for another 1-2 minutes. Add the rice and stir until the grains
