SPICY CURRIED CHICKEN WITH CAULI RICE

170g Greek-style yoghurt
2 garlic cloves, crushed
4 tsp curry powder
4 tsp balsamic vinegar
4 chicken breasts
2 tbsp olive oil
250g basmati rice
1 onion, chopped
1 cauliflower, cut into florets
1 small bunch mint leaves
100g baby spinach leaves
1 chilli, deseeded, sliced (optional)
