PARMA HAM WITH GRILLED SHERRY PEACHES, ROCKET AND PARMESAN

It is best to prepare the peaches ahead of time so they marinate and soak up all the flavours of the Sherry

Serves 2 EASY 30 mins + 2 hrs, to marinate

WHAT YOU NEED

3 ripe peaches
1 tbsp castor sugar
60ml (¼ cup) Sherry
80g Parma ham slices (about 6) handful wild rocket
1 wedge Parmesan/Grana
Padano, shaved
2 tbsp extra-virgin olive oil
salt and freshly ground
