Sesame prawn skewers

SERVES 4 PREP AND COOK TIME 1 HOUR

1 tablespoon fish sauce
2 teaspoons white sugar
1 stick lemongrass, white part only, chopped finely
2 cloves garlic, chopped finely
1 tablespoon toasted sesame seeds
½ teaspoon sesame oil
¼ cup (60ml) vegetable oil
24 (1kg) uncooked king prawns
2 (260g) Lebanese cucumbers, cut into chunks
1 cup loosely packed fresh coriander sprigs
1 cup loosely packed fresh Thai basil leaves
lime wedges, to serve

1 Soak 24 short bamboo skewers in water.

2 To make the marinade, combine the sauce and sugar in a medium bowl; season with salt and freshly ground black pepper. Stir to dissolve the sugar. Add the lemongrass, garlic, seeds and oils; mix together well.
