MIGHTY MUFFINS

COCONUT & VANILLA MUFFINS

PREP + COOK TIME 40 mins MAKES 12

Low sugar doesn’t have to mean low flavour – these muffin variations take the cake! They’re perfect for filling the tins or the kids’ lunchbox

Preheat oven to 180°C. Line a 12-hole muffin pan with paper cases. Sift 2 cups and 2 teaspoons into a large bowl. Whisk 1 cup natural ½ cup melted cooled virgin ½ cup pure and 2 in a jug. Pour over dry ingredients; stir with a fork to just combine. Spoon mixture into cases; top with 1 cup . Bake for 30 minutes or until a skewer inserted into the centres comes out clean. Cool in tray for 5 minutes.
