CHICKEN & KALE WHOLEMEAL PASTA LASAGNE
PREP + COOK TIME 1 hour 25 mins SERVES 4
• 300g kale (see notes)
• 2 tablespoons extra virgin olive oil
• 500g minced chicken
• 1 medium red onion, finely chopped
• 1 medium carrot, finely grated
• 2 cloves garlic, crushed
• 1 tablespoon finely chopped rosemary leaves
• ¼ cup tomato paste
• 2 x 400g cans diced tomatoes
• 250g wholemeal lasagne sheets
• ¾ cup grated mozzarella
COTTAGE CHEESE SAUCE
• 750g cottage cheese
• ½ cup finely grated parmesan
• 1 egg
1 Preheat oven to 200°C. Grease a 10-cup-capacity ovenproof dish.
Separate kale leaves and stems; reserve leaves and finely chop stems. Heat olive oil in a large deep frying pan over high heat. Cook kale stems, chicken, onion, carrot, garlic and rosemary, breaking up any lumps
