Fruit and nut meringues

MAKES ABOUT 25 SMALL PIECES

These meringues are very moreish. You won’t stop at just one and will want to keep going! The dried nuts and apricot reduce the overall sweetness of the meringues.

2 egg whites (about 60g)
90g caster sugar
¼ tsp rose water25g dried apricot, thinly sliced25g flaked almonds, toasted½ tsp cocoa powder
