SUMMER JUMP-STARTERS

Oysters & Ponzu

Naked oysters are sadly the version that most people are familiar with. Very basic, I Know, but it neednʼt be so mundane. You can spice them up with the perfect dressing.

PREPARATION TIME: 10 minutes YIELDS 4

Ingredients:

24 oysters, shucked
½ red onion, finely brunoised
½ cucumber, deseeded and finely brunoised
5g mint, chiffonade
Fresh coriander and apple blossoms, for garnish

For the ponzu:

100ml soy sauce
200ml rice vinegar
50ml lemon fresh juice
1 inch piece of nori
