TORTILLA EGG BOWLS
MAKES 6 BOWLS PREPARATION: 15 MIN COOKING: 40 MIN
6 snack tortillas (about 10cm in diameter)
250ml (1c) grated cheese
200g ham, diced
150g cherry tomatoes, halved
6 eggs, whisked
250ml (1c) milk
salt and freshly ground pepper
Preheat the oven to 180°C. Grease 6 hollows of a large muffin pan with nonstick spray.
1 Line each muffin hollow with a tortilla (fold the tortillas into quarters to make them easier to manoeuvre into the hollows).
