SWEET POTATO AND PECANNUT TART
This orange sweet potato tart seasoned with cinnamon rivals popular pumpkin tart.
MAKES 1 TART PREPARATION: 30 MIN COOKING: 1½ HOURS
500g peeled and cubed orange sweet potatoes
15ml (1T) olive oil
1 roll (500g) puff pastry
PECAN NUT LAYER
60ml (¼c) golden syrup
60ml (¼c) brown sugar
1 egg
100g pecan nuts, coarsely chopped
SWEET POTATO LAYER
2 eggs
125ml (½c) cream
125ml (½c) self-raising flour
2,5ml (½t) ground cinnamon
2,5ml (½t) salt
TO SERVE
extra pecan nuts (optional)
vanilla ice cream or whipped cream
Preheat the oven to 180°C. Line a 20cm round spring-form cake tin with baking paper. Keep a baking sheet
