Thai green chicken curry with noodles and crunchy greens
A classic turned into a lighter and more aromatic broth, which is perfect for staving off colds.

✿ 350g (12oz) skinless, boneless chicken thighs, cut into bite-sized chunks
✿ 2 shallots, finely chopped
