Build your own Christmas hamper

Coffee pistachio brittle

This brittle is the perfect gift for a sweet tooth that needs a pick-me-up! Swap out the nuts for your favourites. You will need a sugar thermometer for this recipe.

MAKES 2 X 25CM SLABS PREP AND COOK TIME 35 MINUTES

2¼ cups (315g) shelled pistachios
1 tablespoon instant coffee powder
2¼ cups (560g) firmly packed brown sugar
250g salted butter, chopped
½ teaspoon sea salt flakes
1 teaspoon bicarbonate of soda, sifted

1 Preheat oven to 160°C (140°C fan-forced). Grease shallow baking trays. Line the base with baking paper.

2 Pour boiling water over pistachios and leave for 1 minute. Drain and transfer to a clean tea towel. Rub vigorously to remove the skin of pistachios. Reserve ¼ cup of the greener pistachios and slice thinly. Finely chop the remaining nuts or pulse in a food processor.
