SPARKLING WINE & POPSICLES
MAKES 6
FOR THE POPSICLES
• 100g mixed frozen berries
• 1 tbsp xylitol
• 2 cups coconut milk
• 2 tbsp pomegranate juice
• fresh rosemary sprigs
• chilled sparkling wine
1. Place berries into the base of 6 popsicle moulds and set aside.
2. In a large jug, whisk together the xylitol, coconut milk, pomegranate juice and ½ cup of water. Pour the mixture into the moulds.
3. Freeze the popsicles for at least 4 hours, or overnight.
Unmould the popsicles and place each of them into a serving glass, then add a sprig of rosemary. Pour over the sparkling wine
