When you eat high concentrations of sugar, your blood sugar spikes significantly within 30 minutes. This triggers a surge in insulin, whose job it is to bring blood glucose back down. As your blood sugar drops and starts to become too low, you may experience a ‘sugar crash’ and feel tired, unfocused, irritable and/or hungry.
