STUFFED PORK LOIN WITH CRACKLING
Pork loin is the ideal cut for enriching with a filling, then roasting to perfection to achieve crunchy, crispy crackling.
Serves 6–8 • Preparation time: 45 minutes • Cooking time: about 2 hours
• 2kg pork loin, skin on, at room temperature
• sea salt and freshly ground black pepper
• 250ml stock
