The handmaid’s tale undressed (& unrolled)

» SERVES 4

» PREPARATION 20 MINUTES, PLUS 2 HOURS STANDING

» COOKING 25 MINUTES

2 large carrots, shredded with a julienne peeler or cut into long matchsticks
200g rice vermicelli noodles
Boiling water
3 long red chillies, deseeded and finely chopped
1½ tsp brown sugar
Juice of 1 lime
75g (1 cup) iceberg lettuce, finely shredded
2 Lebanese cucumbers, thinly sliced
150g red cabbage, shredded
100g bean sprouts, trimmed
400g mixed cherry tomatoes, halved
1 bunch Thai basil, leaves picked
1 bunch mint, leaves picked
½ bunch coriander, leaves picked
110g (⅔ cup) unsalted roasted peanuts, coarsely chopped
Lime wedges, to serve

VEGAN ‘FISH’ SAUCE

80ml (⅓ cup) soy sauce or tamari3 nori sheets, torn into large1 tsp white miso paste
