Developed by slaves who came from Southeast Asia – and infused with a longing for the flavours of home – Cape Malay food is based on a beautifully aromatic mix of spices (it’s notably not hot, like Indian curries). With additional techniques and ideas from East Africa, Europe and Islamic cooking applied to local ingredients, this is a unique cuisine created in Cape Town.
