Chickpea coconut curry
Serves 4-6
Cooking time: 23-25 minutes
• 2 tbsp oil• 2 medium yellow onions, or 1 large red onion,• 1 x 400g tin chopped tomatoes• 2 x 400g tins chickpeas, drained and rinsed• 3 garlic cloves, minced• 1½ tbsp garam masala• 1 tsp curry powder• ¼ tsp cumin• 1 x 400g tin coconut milk (preferably full fat)• 1 tbsp + 2 tsp coconut flour (you can use ordinary flour if you aren’t gluten-sensitive)• juice of 1 lime• coriander• pickled jalapeños
