Mashed Potato Puffs

6 SERVINGS | 3 PUFFS

CAL 63 | FAT 2G | SAT FAT 1G | PROTEIN 3G | CARBS 8G | CHOL 2MG | FIBER 1G | SODIUM 99MG

DIETARY EXCHANGE 1 VEGETABLE, ½ FAT

1 cup prepared mashed potatoes
½ cup finely chopped broccoli or spinach
2 egg whites
4 tablespoons shredded Parmesan cheese, divided

1. Preheat oven to 400°F. Spray 18 mini (1¾-inch) muffin cups with nonstick cooking spray.

2. Combine mashed potatoes, broccoli, egg whites and 2 tablespoons cheese in large bowl; mix well. Spoon evenly into prepared muffin cups. Top evenly with remaining 2 tablespoons cheese.

3. Bake 20 to 23 minutes or until golden brown. To remove from pan, gently run knife around outer edges and lift out with fork. Serve warm.
