ARROZ CON POLLO

This rice and chicken dish is standard fare across Spain and Latin America. Recipes vary from home to home, but this version is decidedly Spanish.

HEAT:

1/4 cup olive oil
3 oz. Serrano ham, diced

ADD:

2 cups diced yellow onions
2 Tbsp. minced fresh garlic
2 dried bay leaves
1 tsp. smoked paprika
1/4 tsp. crumbled saffron threads

DEGLAZE:

1/2 cup dry sherry2/2 cups low-sodium chicken broth1 can diced
