CREAMY MAC ‘N CHEESE WITH CORN

3 cups fresh or frozen corn kernels
MELT:
4 Tbsp. unsalted butter
1/4 cup minced shallots
2 Tbsp. minced fresh garlic .
1/4 cup all-purpose flour
WHISK IN:
5 cups whole milk, warmed 8 oz. sharp yellow Cheddar, shredded 8 oz. yellow American cheese, shredded 1 Tbsp. Dijon mustard Salt, black pepper, and cayenne pepper to taste
