STUFFED PASTA SHELLS WITH SPINACH,GORGONZOLA AND SAUSAGE
This dish looks really impressive and tastes divine. Serve with a crisp salad and perhaps some garlic bread. Preparation time: 40 minutes Cooking time: 40 minutes
■ 250g/8oz large shells (can sub with pasta tubes if you can't find shells)
■ 2 sausages, veggie or meat
■ 450g/12oz spinach
■ 200g/7oz cream cheese
■ 100g/3½oz gorgonzola, crumbled
■ 2 eggs
■ 1 garlic clove, minced
■ 1tsp oregano
■ Salt and pepper to taste
■ 400g/14oz tomato passata
■ 50g/1½oz Parmesan cheese, grated
1. Preheat oven to 200C/fan 190C/gas 6.
2. Cook the pasta shells for a minute less than the package directions indicate, drain and let cool.
