Cheesy Meals

Using cheese in your cooking doesn’t mean creating a gooey mess or reverting to old favourites like “mac and cheese”. The unique characteristics of an individual cheese can enhance the flavour and texture of many dishes, both savoury and sweet. Mushroom & Spinach Brown Rice Risotto

Whenever I cook rice for a curry, I always cook extra and make this delicious risotto for dinner the next night. It has a nutty yet authentic flavour and is much quicker and easier to make than an arborio risotto.

Serves: 4

50g butter
2 cloves garlic, peeled & crushed
1 red onion, finely diced
1 large stick celery, finely diced
¼ cup porcini mushrooms
Small pinch sea salt
400g mushrooms, sliced
¼ cup white wine
2 cups cooked brown rice
250mL vegetable stock (or chicken stock if not vegetarian)
2 handfuls baby spinach leaves
1 cup grated Parmesan cheese
Black pepper, to taste
Micro herbs, to serve

In large frypan, melt butter and over low heat sauté garlic, onion and celery until softened but not brown.

Place porcini mushrooms in small bowl and cover with boiling water.
