UP ON THE ROOF

A garden begins with a feeling or sensation, perhaps one remembered from years before. It may be some time before the idea takes shape, the plans made and put into place.

The inspiration for the Skyline Garden at Coutts Bank in the Strand began far away from the centre of London. Peter Fiori, executive chef at Coutts Bank, used to spend his childhood summers on the family farm at the village of Cerretoli, in the area called Garfagnana in northern Tuscany. “I remember eating a freshly picked ‘Marmande’ tomato with a pinch of salt and a good slug of thick Lucca olive oil,” he said.

His taste bud memory was of dishes eaten by the family
