16 medium uncooked prawns, cleaned, tails intact
Sea salt & freshly ground black pepper
½ red onion, thinly sliced
1 cup each mint & coriander leaves
2 mangos, peeled & thinly sliced
½ cup roasted peanuts, chopped

Dressing

1 long red chilli, finely chopped1 tbsp lime juice1 small garlic clove, finely minced2 tbsp olive oil1 tsp honeySea salt & freshly ground black pepper
