The common ostrich, or simply
ostrich, is a species of large
flightless bird native to certain
large areas of Africa.
OSTRICHES
• Female ostriches can produce eggs for 40 years or longer.
They reach peak egg production between 7 and 11 years
of age.
• The weight of an ostrich egg usually ranges between 1100
and 1950 g, averaging 1600 g. An egg weighing 1522 g is
15.5 cm long, 12.9 cm wide, and measures about 45 cm in
circumference. They mature in 2-3 years and can run
70km/h as an adult. The male can reach the height of 2.1-
2.8 m and weighs 120 kg and the female can reach the
height of 1.7-2.0 m and weighs 100kg
OSTRICH EGG PRODUCTION
• The ostrich’s egg are the largest of all eggs. Under natural
conditions, the female ostrich lays 12-18 eggs and if under
farm conditions, the female ostrich can lay 10-20 eggs.
• Ostrich eggs are produced all over the world and South
Africa is the leading producers of ostrich eggs.
• An ostrich egg weighing 1580 g contains 59.8% albumen,
20.4% yolk, and 19.8% shell. It surpasses a chicken egg in
terms of calcium, magnesium, manganese, iron, and zinc
content (Horbańczuk, 2003).

WHAT IS OSTRICH MEAT?

• Instead of being similar to poultry, ostrich is red meat


much more like beef in taste and texture. Ostrich
meat has great versatility and can be bought
ground, cut into steaks, sausage, and even hot
dogs. Ostrich can be substituted for most any meat
and grills very much like lean beef.
OSTRICH MEAT

• Most of the meat is found on the thigh and


hindquarter of the ostrich, with lesser amounts on the
forequarter.
• Because of the limited quantity in production as
compared to beef, poultry, and pork, it is relatively
expensive.
PRICE OF OSTRICH MEAT?

• The average ostrich, typically butchered at 14


months of age, will produce about 75–130 lbs.
of meat.
• Ground ostrich meat ranges from $10–15/lb., with
filets at $25–50/lb. and tenderloins upwards of $50/lb.
At the average wholesale price of $20/lb., that's a
minimum of $1500 per bird.
