The meat industry has the potential for generating large


quantities of solid wastes and wastewater with a BOD of 600
milligrams per liter (mg/l) and suspended solids levels can be 800
mg/l and higher.

Odour emission from the industry affects the life of people in the
vicinity

Odour from animal feeding operations is not caused by a single


compound, but is rather the result of a large number of contributing
compounds including ammonia (NH3), volatile organic compounds
(VOCs), and hydrogen sulphide (H2S) .

Pesticides used to control pests (e.g. parasites and disease


vectors) and predators have been reported to cause pollution when
they enter groundwater and surface water

Manure contains appreciable quantities of potentially toxic metals


such as arsenic, copper and zinc . In excess, these elements can
become toxic to plants and can enter water systems

Collagens containing yellow tail fish bone were used as raw
materials for production of protein hydrolysates and peptides

Fish Protein hydrolysates could be of potential use as food


ingredients.

 Enzymes and bioactive peptides obtained from fish waste are


used for fish silage, fish feed or fish sauce production.

 Auto-hydrolysis of waste fish viscera to produce peptone


hydrolysates and their use in microbiological media to support
growth and bacteriocin production by lactic acid bacteria

Alternative uses of fish processing waste, like utilization of fish


mince, applications of fish gelatin, fish as a source of nutraceutical
ingredients, fishmeal production, the possible use of fish and
protein concentrate as a food source.
EFFECT ON SOIL, WATER AND AIR QUALITY

Effluent streams generated from seafood processing contain oils,


proteins and suspended solids. They can also contain high levels of
phosphates and nitrates. When discharged into water bodies can
cause eutrophication

Deterioration during storage causes release of odourous


compounds such as ammonia, mercaptans, and hydrogen sulphide
gas

Processing waters, which include water used in the cooling and
heating processes. These effluents are normally free of pollutants and
can with minimum treatment be reused or just discharged into the
water system generally used for rain runoff water.

Dairy cleaning waters may also contain a variety of sterilizing agents


and various acid and alkaline detergents. The most commonly used CIP
chemicals are caustic soda, nitric acid, phosphoric acid, and sodium
hypochloride. It has to be treated before discharge

Dairy waste can be effectively treated either with aerobic or


anaerobic processes.

The former consist of low yield, pathogen free product, and high
temperature operation whereas the latter is a simple, low budget
and conservative technology.
