WHAT IS TEA?
• The leaves, leaf buds, &
internodes of the tea plant
prepared for use in
beverages usually by
immediate curing by heat
or by such curing following
a period of fermentation.

• Also refers as “Chai” .


HISTORY OF TEA

• 2737 BC – Emperor Sheng Nung


• 618- 906 – National Drink of China
- Became popular in Buddhist
Monasteries
• Late 8th century – First book of Tea
- Japanese tea culture began
• 1606 – Tea remained a drink for the wealthy
• 1664 – Turning point of tea in Britain
• Late 17th century – High taxes on tea
• Late 18th century – Tea smuggling &
adulteration
• 1784 – End of tea smuggling
• 1908 – Thomas Sullivan
• 1920 – Tea bugs were developed
• 1929 – The first tea plantation
• Today – Tea is the most widely consumed
beverage in the world
TYPES OF TEA
All type of tea comes from the basic plant, the Camellia sinensis plant.

Black Tea
• Is allowed to wither, proceeds a process called oxidation.
• It has higher caffeine content than other teas

Oolong Tea
• Allowed to undergo partial oxidation
• Has supremely fragrant

Green Tea
• Allowed to wither only slightly after being pick
• Oxidation process stops very quickly by firing the leaves

White Tea
• Hand-processed with no oxidation

Yellow Tea
• Typically go through more oxidation than green teas
• Has longer, slower drying period
