INTRODUCCIÓN
El mantenimiento de la higiene en una planta procesadora de alimentos es una condición
esencial para asegurar la inocuidad de los productos que allí se elaboren. Una manera
eficiente y segura de llevar a cabo las operaciones de saneamiento es la implementación
de los Procedimientos Operativos Estandarizados de Saneamiento (POES)
