Santa Rita is the home of Duman and OcampoLansang Delicacies (Turones de Casuy, Sansrival, Uraro
and other sweets that sell in SM City Malls nationwide).
Duman is made of malagkit rice (lakatan malutu) that
is beaten from its husks and toasted in a clay oven. To
the rest of the country, it may just be plain green rice
or even un-popped pinipig. But it is a prized seasonal
food that can be found during the Christmas season,
after the rice harvest in November. The younger
kernels of rice that dont fall off the husks are colored
green. These husks are beaten against a hard surface
until they fall off. They are then soaked in water,
cooked for 30 minutes and then pounded. This rigorous
process helps release the sweet oils and nuttiness of
the rice.Years ago, during duman season, Santa Ritas
streets rang daily with the tok-tok of baseball batsized wooden pestles hitting meter-high mortars as
lacatan malutu, a red-husked variety of glutinous rice,
was transformed into duman. Nowadays, only a few

St. Rita of Cascia (1381) was

born in the Italian town of
Roccaporena. When her husband
and twin sons died, she entered the
Augustinian Nuns. At age 60, while
meditating before the cross, a
wound seeming afflicted by a thorn
appeared on her forehead. St. Rita
began
boring
the
sign
of
stigmatization which is considered
being one with Jesus. Because of
the stigmata, she suffered in pain
for the next 15 years which she
courageously accepted. St. Rita
died on May 22, 1457.

PERSONALNAME
NAME
Santa Rita was named after its patroness,
Santa Rita de Casia whose festivity is
celebrated every 22nd of May. The town
was earlier referred to as Santa Rita de
Lele or Santa Rita Baculud due to its
proximity to the ancient town of
Baculud , now known as Bacolor. This
was due to the nearness of the latter
town where Sta. Rita residents bought
their daily needs.

ORIGIN

The town of Sta. Rita was officially

founded in 1726. However, records date the
existence of the settlement back to 1697.
Huge wild trees dominated the landscape
when the Spanish first arrived. They cleared
an area that was called Gasak, the original
name of the site which is now San Isidro.
Initially integrated with Porac, the settlement
gradually to a wide territory embracing the
present barrios of San Vicente, San Matias,
Sta. Monica, San Agustin and San Juan. It was
renamed Sta. Rita in 1726 and became
independent of Porac in 1770.

Duman Festival

Sta. Rita, Pampanga is known as

the best producer of duman. In fact,
the region holds a yearly festival
dedicated to this simple-looking
treat. The festival started when the
community
found
themselves
gathered in the streets, pounding
away the duman with their large
wood mortars at two oclock in the
morning. To the local folk, duman
can be bought at Php 40 by the
glass. However, it is amazing to learn
that duman is actually exported to
other parts of the country and the
world at around $35 a kilo.
To get a taste of this green gold,
visit the Sta. Rita Duman festival on
the first Saturday of December.

Pasyun Serenata
In Brgy. Basilio, local folks hold a quaint version
of the pasyun, called pasyun serenata, in which
two sets of chanters mounted on elevated
platforms alternately sing the pasyun to the tune
of classical opera pieces, each group of chanters
accompanied by its own brass band situated
beneath the singers. the whole performance lasts
all night, and is repeated nightly throughout the
holy week. the bands are allowed to play their
best pieces during intervals between pasyun
texts, but there is only a small crowd to
appreciate them. the bands are also placed
precariously close to the road, where noisy
tricycles and over speeding jeepneys and trucks
interfere with otherwise magnificent show.

PERSONAL NAME

The towns name was derived from Baliwag

(tardy in Spanish) due to the fact that the
natives often arrive late for Holy Mass, whose
original name was Santo Thomas had its
Patron, St. Thomas the Apostle. He is also
called Doubting Thomas or Didymus, meaning
twin as does Thomas in Aramaic and was
of the Twelve Apostles of Jesus. The Patron
Feast is celebrated yearly on the 21st of
December from the Towns original founding
date of 1792.

Sto.

ORIGIN
The town's name is derived from Baliwag ("tardy" in
Spanish) a reference to local habit of arriving late for
Mass. Baliwag, whose original name was Santo Tomas,
had its Patron, St. Thomas the Apostle.

On September 15, 1792, Santo Tomas was severed from its

parent Minalin, Pampanga. On May 4, 1899, the town was under
the U.S. Force's administration. On January 2, 1905, it was ceded
to San Fernando, Pampanga until 1905. On October 12, 1951,
Executive Order No. 476 (issued by ElpidioQuirino) created Santo
Tomas and its five barrios of San Matias, San Vicente, San
Bartolome, Sto. Rosario and Poblacion with the seat of
government at barrio San Vicente.

The town became the site of the bloody encounter between

Filipino and American forces during Philippine Revolution
known as the Battle of Santo Tomas.

Sasmuan

ORIGIN
Sasmuan already had a well-developed system of
government well before the era of Spanish colonization. It
evolved to be one of the oldest and major settlements in
Pampanga by the 16th century. The Santa Lucia Church

Philippines by the Spaniards with the political and
financial support of the Principalia.

Plant
Names

The Etymology of the towns name can be derived

from Kapampangan word: Sasa or Nipa , an evergreen
bamboo plant which sasmuan used to have in
abundance during its early years. Nipa palms grow in
softmudand slow-moving tidal and river waters that
bring in nutrients. The palm can be found as far inland
as the tide can deposit the floating nuts. The nipa
palm's trunk grows beneath the ground and only
theleavesandflowerstalk grow upwards above the
surface. Thus, it is an unusual palm tree, and the leaves
can extend up to 9m (30ft) in height. The flowers are a
globularinflorescenceof female flowers at the tip
withcatkin-like red or yellow male flowers on the lower
branches. The flower produces woody nuts arranged in
a globular cluster up to 25cm (10in) across on a single
stalk. The ripe nuts separate from the ball and are
