Food is any substance consumed to provide
nutritional support for the body. It is usually

? WHAT IS VITAMIN A
Vitamin A is the name of a
group of fat-soluble retinoids,
including retinol, retinal, retinoic
acid, and retinyl esters

1. Vitamin A, also called retinol, has many
functions in the body.

2. In addition to helping the eyes adjust to
light changes, vitamin A plays an important
role in bone growth, tooth development,
reproduction, cell division, gene expression,
and regulation of the immune system.

3. The skin, eyes, and mucous
membranes of the mouth, nose,
throat and lungs depend on vitamin
A to remain moist.

4. Vitamin A is also an important
antioxidant that may play a role in
the prevention of certain cancers
Two forms of vitamin A are available in the
human diet:

1. preformed vitamin A
(retinol and its esterified form, retinyl
ester)

2. provitamin A carotenoids

Preformed vitamin A is found in foods from
animal sources, including dairy products, fish,
and meat (especially liver). By far the most
important provitamin A carotenoid is beta-
carotene; other provitamin A carotenoids are
alpha-carotene and beta-cryptoxanthin. The
body converts these plant pigments into vitamin
A
SOURCES OF VITAMIN A
Concentrations of preformed vitamin
A are highest in liver and fish oils .
Other sources of preformed vitamin A
are milk and eggs, which also include
some provitamin A.
