Preheat the oven to 375°F (190°C).Cut the honeynut squash in hal lengthwise (keep the stem on or presentation) and use a spoon to scoop out the seeds careully so there’s a nice spherical hole, saving the seeds or later. Place each hal skin side down in a deep baking dish just big enough to ft all the squash. Scatter the smashed garlic over the squash, along with the herbs. Season with the cumin, coriander, and nutmeg, and salt and pepper to taste. Fill the bak-ing dish with enough avocado oil so it goes up hal o the height o the squash, and pour a little oil into each squash well on the esh side

Sherry Agrodolce Honeynut Squash with Fried Squash Seeds

I love honeynut squash, a hybrid between winter and butternut squash, because o its individual, personal size that minimizes waste no matter how small or large the group you’re cooking or. I grow them in our garden rom Dan Barber’s Row 7 Seeds, and they are now quite ubiquitous in grocery stores during the all and holiday season. I prepared this dish or a hundred people when I cooked at the Ecology Center in San Juan Capistrano, an incredible regenera-tive arm community anchor, so the recipe is designed to scale up or a large gathering. I oten serve it in the baking dish, right out o the oven, or easy hosting. I like to keep the stem on or the whole look, and this recipe o course utilizes the seeds or garnish, with no ele-ment let behind.Agrodolce is a Sicilian sweet-and-sour, sticky, molasses-like sauce. I you’re short on time, store-bought pomegranate molasses is an excellent substitute. Montasio cheese is a beautiul cow’s milk cheese rom the Friuli region o Italy; you can substitute Gruyère or any semisot, pungent option you can fnd (even blue cheese would be a un kick on this).
