Our country is blessed with stretches of the most stunning coastline in the world and my benchmark for what is a beautiful beach runs pretty high. It takes a lot to impress me yet I fell in love with Bantayan. It wasnt just its gorgeous beaches. It was everything else that came along with the white sand and blue skies the small town feel, pristine environment and smiling faces. Erwin Lim took hundreds of photographs and vetting them for the final layout was a painful process. We had our share of excitement on our (or was it just my) first helicopter ride ever, on board the R-44. Even if it was over sooner than we had hoped for, Jude, Erwin and I couldnt wipe the grins off our faces. Fun does not even begin to describe the experience of hovering over rooftops. I just wish we could have done some thrilling aerial acrobatics. But since the R-44 is built for safety, I stand a better chance of getting my kicks on a roller coaster instead. They say that summer has started already but isnt it forever summer in the Philippines?

Homegrown Success

t started small, a charming family-run burger and pizza joint in the neighborhood they called home. The hamburger was their centerpiece, the pizza a reincarnation of a 50-year old bread dough recipe that no longer sold. Young couple Aubrey and Barney Borja opened Dong Juan (yes, dong, not don) quietly in 2007, working hard to achieve some moderate success. It never happened, the moderate, that is. Success came hard and fast, with customers returning again and again for the burger that was full of flavor. It wasnt and still isnt 100% all beef but no one is complaining. Rabid followers often describe it as the best burger in Cebu and I wont argue with them. While it may not be my favorite, I must concede that it is one of the most popular in town. The pizza is less stellar but has a more interesting story behind it. Aubreys Navarro grandmother owned a successful panaderia 50 years ago, with the Frances bread a best seller of her Elite Bakery. Hoping to relive her grandmothers success, she attempted

to resurrect the Frances bread, with dismal results. Undefeated, she took her grandmothers 50-year old recipe and tweaked it to become Dong Juans unique pizza dough, its flavor and texture hewing closer to biscuit than bread. Making no attempt to emulate an Italian pizza, Aubreys biscuit-like dough is topped with flavors from Barneys childhood salty, unsophisticated and full of memories, producing a version of pizza like no other. As more and more customers poured into the little restaurant, the demand for variety in Dong Juans menu increased. They wanted rice. And of course, if you serve rice, you must serve dishes to go with it. So the menu grew, an organic growth that saw their selection adjusting to what their customers wanted. Soon enough, they found themselves expanding and opening their first branch at Persimmon. Other branches opened in quick succession, its reputation for well-priced, good, unpretentious food spreading like
wildfire. And just like its food, its interiors do not try hard; quiet, tasteful with a hint of nostalgia and art that add the right degree of quirk. A meal at Dong Juan will make you happy. One look at their bill at the end of your meal will make you jump for joy. And therein lies the secret to their success. Dong Juan now has 6 locations. The original by far is the most charming. he lure of Bantayan to many wouldbe tourists is the promise of Holy Week reverie. While most of Cebu quiets down and heads to the churches for reflection and prayer, Bantayan comes alive and transforms itself into Cebus party place of the season. Folklore claims that in the 1800s, a papal fiat exempted the fishing town of Bantayan from fasting and abstinence, allowing the locals to eat meat. How and when it went from eating meat to feasting on lechon and drinking beer on Good Friday is anybodys guess. This so-called papal

dispensation is still being used as the best excuse to fiesta in Bantayan on Semana Santa and during this time, the island is bursting at the seams. Bantayan Island is blessed with powder white sand, pristine waters and clear blue skies. Fortunately, white sand and blue skies are all yearround in Bantayan so every day is a good time to visit. It is a 2-hour drive from metro Cebu heading north to the port of Hagnaya, San Remigio, passing coastal roads, mountain passes and fields of sugarcane. Public transportation and private charters operate regularly between the city and Hagnaya, where you can catch
an easy 1-hour ferry crossing to Santa Fe, Bantayan. Two shipping lines, the Super Shuttle Ferry and Island Shipping Lines operate RORO (roll-on, roll-off) and passenger service, alternating every half hour till 4:30pm. Upon arrival, you will find tricycles instead of taxicabs parked on the wharf to take you to where you want to be. It is wise, however, to make prior arrangements for your transfer from the port to your resort. The Bantayan Islands are located in the geographic center of the Philippines and is made up of 3 municipalities Santa Fe on the southeast coast facing the main island

of Cebu, Bantayan on the southwest and Madridejos in the northernmost tip. A concrete highway connects all 3 towns, making land travel an easy and pleasant experience.
Santa Fe
The port town of Santa Fe is where many of the beach resorts are located. A full range of accommodations is available by the beach, from backpacker cheap to very nice, but there are no big names here and certainly nothing that can be classified as luxurious. Our choice of accommodations, Hoyohoy Villas is very close to the port and while it might not have the best beachfront
in town, it makes up for it in charm. There are only 9 tastefully appointed villas in the resort, ensuring a quiet, enjoyable, crowd-free time during your stay. Service is personal and warm, attentive without being intrusive. Modern amenities such as cable tv and Wi-Fi are available so dont expect people to get their noses off their iPads and iPhones. The towns restaurant row is on Batobalanos Street, a short block of small establishments, made predominantly of bamboo, with garish lights, blaring music and plastic furniture. Interestingly, you will find restaurants that claim to be
Portuguese, French and Australian side-by-side bars and grills, and the token sutukil Arjaymay that serves the freshest seafood on the strip. Pizza and chicken curry are found in all the menus, regardless of cuisine, a clear indication that foreigners are frequent patrons in the area. Prices, by local standards, are expensive given the facilities provided. Food and beverage are definitely priced for tourists except for Arjaymay STK where you can get a delicious lechon manok (spit-roasted chicken) for Php150.00 and the sweetest fresh scallops on the shell for Php120.00 per kilogram, cooked to your liking. Crabs and lobsters have to be

ordered in advance. At Marisqueira o Portuguese, the Pork Kebab with French Fries and Salad is a generous skewer of pork for Php275.00. (It surprisingly wasnt overdone and except for it being slightly on the tough side, made a satisfying meal.)
The Paelha at Php295.00, is tasty and big enough to serve 6 hungry people with a lot of rice. Further down the road, is one of the towns best restaurants Balikbayan, which you can immediately guess is Filipino. Its reputation rests on its laing (taro leaves cooked in coconut milk) and rightly so. It was undergoing expansion on our visit, proof that all is well and thriving. A final word of warning to the hungry though, all restaurants cook to order so your wait is a minimum of 30 minutes to a full hour, enough to make your eyes roll over your head. So pay heed and dont wait to be famished (by the time your food comes, you will be) or bring something to munch on.
Appetizers come with your meal so dont count on those either. Silion Island, known locally as Hilantaga-an Diot (small Hilantagaan) and referred to by tourists as Virgin Island, is a relatively undeveloped 30-hectare private jewel of an island, owned by an old family from Madridejos. A short banca (outrigger) ride takes you to a beautiful beach with fine powdery grains of white sand and crystal clear aquamarine waters the sight of which makes you catch your breath as you approach it. Marine life thrives around the island and snorkeling is a definite option. An entrance fee of Php50.00 per person is collected upon arrival and small bamboo picnic

huts can be rented for Php100.00, for use the entire day. If you intend to stay through lunch, you should pack your own food and beverage or make arrangements with your boatmen to bring seafood and meat to grill for a fee. Facilities are a bare minimum and while a toilet shed can be found, it is best to leave its use strictly for emergency only. Guests are not allowed to stay overnight for security reasons.

Bantayan
The municipality of Bantayan is the largest in terms of area and income. Classified as a second-class municipality, it is the main trading hub for seafood, dried fish and poultry. The islands are considered as Cebus fishing ground and egg basket, supplying not just the province of Cebu, but the rest of the Visayas as well. The market, including the wet seafood market is clean and bright,
teeming with catch that are still glistening with freshness. Bantayan is also known as the source of Cebus dried fish and the markets dried seafood section holds many varieties that never make it to the city. At the central town plaza is the Church of Saints Peter and Paul Parish. Established in June 1580 as the Convento de la Asuncion de Nuestra Seora, it is the first and oldest parish in the Visayas and

Mindanao. The existing structure was built it 1863, using coral and stone from the island. It is the center of the solemn religious procession depicting the Passion of Christ on Maundy Thursday and Good Friday, an annual tradition that draws hundreds of Catholic devotees and curious tourists. There are several caves on the island, with Ogtong Cave in Santa Fe a
popular destination. In Baranggay Tami-ao, Bantayan, another subterranean pool can be found inside the Bantayan Island Nature Park and Resort. It is an active cave, with stalactites and stalagmites still forming around it so you have to be careful where you step. (A brief stroll around the 8-hectare property brought us to an area overlooking the sea. Our guide informed us that below where we stood, was a cavern as
large as a church that is not yet open to the public.) Swimming is allowed, the clear emerald green waters eerie yet strangely inviting.
Madridejos
Because of the location of the Bantayan Islands in relation to the rest of the Visayas, it was used strategically in the 17th century as the first line of warning against invading Muslim pirates or Moros.

well-kept grounds and a museum whose only artifact seems to be the kuta itself. While efforts are being made to maintain the structure, it is visibly crumbling, with wooden rafters providing little support to keep the watchtower from toppling. Despite its state, its significance in history cannot be overlooked. Down at the beach is what the locals call the boardwalk, which is actually a narrow concrete bridge that leads to nowhere, its purpose to provide an attraction for people to take a stroll in or to serve as a quaint backdrop for photographs. Maybe it was inspired by the wide boardwalks on the beaches of California, maybe they were just being cute. Whatever the intentions, it does make a picturesque structure against the fiery reds, bright orange and flushed purples of the Madridejos sunset. Cebu is chock full of beautiful white sand beaches, each one as pretty as the next. Bantayans one up is the local color that it provides a soothing provincial air that is apparent as soon as you get off the ferry; a charm that comes from peoples smiles that are both shy and welcoming; establishments that try hard but are not trying hard; history and nature intertwined with the local culture. It is a trip worth taking if you are in for a little adventure; a lot of sun worship and a soul wide open to take in the languorous island spirit. It is this occasion in history that gave the islands its name, the Cebuano term bantayan referred to as to watch over. The Spanish colonizers constructed several watchtowers or kutas around Bantayan, serving as lookout posts against the marauders. Some of these ruins remain, with one that is largely unattended in Santa Fe, behind restaurant row, sitting on private property that does not welcome visitors. A larger and betterpreserved centuries-old kuta can be found in Kota Park, Madridejos, with

You approach with caution, head low and protected (although the blades are within a safe distance, I blame the Damien Omen movies I watched as an adolescent for my irrational fear of whirring blades). One slowly tiptoes until you feel light,
and just as your feet are suddenly raised high up in the air, above your cradled noggin, the aircraftalmost without warningmakes a vertical lift off, as if lighter than air. And up you are, and away. Were at 500 feet now, announces Capt. Dennis Figueroa through the headset. To communicate within the aircraft, and to drown out the deafening sound of the rotors, we are
asked to don large green headsets, with sound-sensitive microphones that go on automatically as you speak, keeping everything hands free. Although the service ceiling of the R-44 is 14,000 feet, I keep to this altitude for the best view for the tourist, adds Capt. Figueroa, who has logged in 1,064 of flying time on what he claims to be The safest helicopter in terms of safety record. The Robinson

Meanwhile, our own route traces the coastline, with Olango Island just a heartbeat away, and the sprawling grounds of Shangri-La looking almost unrecognizable at this vantage point. We quickly fly past the string of gorgeous resorts that call this stretch of Mactan home, making sure we do not
helicopterand the intensity is directly proportional to how long you hold both: the pose and the flight. The cost, to settle the matter, is not at all a buzz kill either. Just US$250 for the coastal tour (approximately PhP11,000), reveals Olvis, which can be divided among the three passengers. After doing some

The short flight cuts travel time considerably, and adds the premium of being able to deliver you door to door. Ive witnessed many proposals done in the air, shares Capt. Figueroa, himself quite single but always a mute witness to THE question, popped 500 feet in the air bymore often than nota sign written on sand or some other substrate below, visible on an orchestrated fly-by. I have yet to carry a passenger that was disappointed.

I have seen Matias grow from this tiny stall, looking like a poor relation of Junjun and Malu (another popular barbecue place that is now gone), to a sprawling open-air under-the-trees eatery that can serve hundreds of people. Basins of skewered meat chicken legs, breast, gizzard, liver and intestines; pork, chorizo, squid are beside the grill. You walk up, choose what you want, hand it to whomever has a pad and pencil, and take a seat. Someone else comes with a basket of puso (rice wrapped in coconut frond) and to take your order for drinks. Your barbecue is then served to you on your table and you think to yourself, I must commend whomever it is for remembering which order goes where. Still number 1 in most peoples lists. Mind-blowing cheap.

In January 2004, it attempted to break the Guinness world record for longest barbecue line, with over 600 barbecue vendors participating and at least 500 sacks of charcoal used to grill 4 tons of pork. No world records were broken but the event managed to be the biggest and most fun outdoor picnic in the city. Decades ago, Larsian off Fuente Osmea was the go-to place for the best barbecue in town. It wasnt a restaurant but a crowded alley filled with street vendors peddling barbecued parts of chicken from the crown to the feet, pork, chorizo, squid and just about anything you could put on a stick. It was not for the squeamish, the surroundings downright filthy in corners, stray dogs and cats plus the occasional rat darting between peoples legs. The running joke was that if you got sick, you were just a few steps away from Chong Hua Hospital where you could get immediate help. Sadly or thankfully (depending on which side youre on), Larsian is gone. A pathetic streamer and a couple of stalls jammed into a small opening in the alley is all that is left of this once epic monument to barbecue. Despite the loss, barbecue still reigns supreme. Once you hit the intersection of Talamban Road and M.L. Quezon, roll down your windows and let your nose guide you. The heady smell of smoke will take you to stall after stall of barbecue a-grillin. Barbecued liempo or pork belly couldnt be better. Aromatics are tucked between layers of meat and fat, skewered in place by bamboo sticks and slowly grilled over charcoal embers, resulting in tender, juicy, flavorful meat that goes rather quickly when people start sticking their fingers into that hot pile of chopped pork. There is a makeshift space behind the grill that doubles up as a seating area that can accommodate a dozen people sitting close together. No ambiance, stuffy and only for the very hungry. Its all about that jug of vinegar filled with red chili peppers. The thing to go for here is the chicken and chicken skin barbecue. Chicken is cut into big chunks, skewered and grilled. Each stick is a combination of dark and breast meat so no pa-a or pecho to choose from. Chicken skin is gathered on a barbecue stick and grilled to a nice crisp making each bite a delicious guilty pleasure. And dont forget to smother your barbecue with that spiced vinegar. It took us a few twists and turns to find this popular barbecue joint, which is probably known as much for its beer as its food. You dont see it from the street, hidden from view just like someones naughty little secret. You park in front of Norkis and walk into the compound. Lo and behold, plastic chairs and tables filled with people happily chatting and munching while a lone grill spews smoke in the corner. Some say it has one of the best barbecue in town, I say its all about a place to hang out where the barbecue isnt bad.
