1. Slice the tofu in 1/2 X 1" pieces, or in 1/2 inch slabs (for sandwiches or tofu 'steaks' - there must be a better w ord!) 2. Place in a bowl, sprinkle w ith braggs, and shake or stir 3. Marinate for a few minutes to an hour as y ou lik e 4. Optional: Add a bit of paprika, cum in, ginger, pinch cay enne to the Braggs or soy sauce 5. Optional: After marinating in Braggs, coat with nutritional yeast before fry ing for a cheesy crispy crust 6. Heat the oil on medium/high in a heavy non stick fry ing pan or well cured cast iron pan 7. Add the tofu, fry 5 minutes or so on each side until brow n and crispy, turning with a spatula (that's the fun part!) 8. To speed things up, fry the tofu in 1/2 inch slabs, w hich you can then cut up as needed
Cooking Tips:
If you can only get f irm tof u, make it ex tra firm by wrapping in a dish towel or paper towels and weighting it w ith something heavy to press out the ex cess moisture. Diff erent b rand s of tof u vary g reatly in firmness. One of the best we'v e found is Woodstock , but y ou should try a few that are av ailable in y our area, to see what w ork s best for you. Kids love f ried tof u, all by itself, and will reliably eat it, preferably dipped in k etchup (buy organic!). Ev en non-vegetarian k ids will eat it. It's fried, crispy and oily - reminds them of fries. Fried tof u makes great sandw iches, especially if you coat the tofu slices with nutritional yeast before fry ing - as in the tofu-on-a-bun picture.
