7here are two people assigned to the salad bar line at 3tonecreek Junior high - one person
to supervise each unit. lt is the responsibility of each person to make sure of the following:
O eep all surface areas clean.
O "uickly clean up any spills with a wiping cloth that has been stored in sanitizing
solution at the proper concentration [100 ppm}.
O Provide an ample number of long-handled tongs or spoons.
O ake sure customers obey safety procedures. watch children closely, because
they're more apt to reach into a food bin.
O Replenish food properly. hever add freshly prepared food to food already on
display.
O Put out only as much food as will be served in a short period of time to lessen the
chance of spoilage and contamination.

7here are two people monitoring the salad bar - one at the beginning and one at the end of
the line. 7he person at the end of the line is responsible for checking reimbursable meals,
making sure that each child has taken a minimum of two menu items.

7he person at the end of the line does not move. 3he remains in position at the end of the
line, monitoring each tray for a reimbursable meal while at the same time supervising the
salad bar for safe operation. lf food needs to be replenished or surfaces cleaned, the
person at the end of the line can do one of two things:
1}. 3he can direct the other general helper to complete the task.
2}. lf the general helper is unable to assist, then the person at the end of the line
must stop the line and complete the task herself.
7he line can resume once the food has been replenished or the surfaces have been cleaned.
