Time for Sisterhood!

By: Bethany Lucas
The 2011-2012 Beta Gamma meetings are sure to be exciting and fulfilling for all members. Our programs and meetings will espouse creativity, communication, and leadership, while giving us the opportunity to enjoy fellowship and work toward the chapters collective goals. Using the feedback from our Beta Gamma sisters, we have quite a variety of programs to offer this year. Please pay careful attention to dates and times, as a couple of our meetings will be non-traditional. Below is an overview of our upcoming programs; please mark your calendars so that you can plan early to attend these meetings; you will find each one to be a delightful excursion from the weeks monotony! We are hosting a Marketplace silent auction. We hope to have a plethora of fresh, homemade, and handmade items to auction off. Items such as fresh fruits and vegetables, flower arrangements, jams, jellies, pies, cakes, breads, dips, pickles, casseroles, ceramics, and more should fill our auction tables. We are asking that each member bring in at least one homegrown or homemade item for the marketplace auction. Items can be from your own home and garden or someone elses! Bid sheets and instructions will be forthcoming, so be thinking about what you want to bring. Money will be used for chapter needs such as the scholarship, supplies, and officer seminars. The August meeting will begin with brunch at 10:30. The brunch menu will consist of orange blossom grits, breakfast casserole, fresh fruit, cream cheese coffeecake, coffee, and apple juice. The cost of brunch is $10.00. After brunch will have the silent auction, then our business meeting. Birthday cake will be served at the end of the meeting. See you there! Reminder: If you order a lunch and do not show up you are still responsible for paying for that lunch.

Dawns Delicacies Summer Squash Casserole

Squash casserole is the most versatile Southern side dish. It pairs well with everything from fried chicken at a summertime Sunday lunch to roast turkey at Thanksgiving. Prep: 25 min., Cook: 5 min., Bake: 35 min., Stand: 10 min. Ingredients: 1 1/2 pounds yellow squash 1 pound zucchini 1 small sweet onion, chopped 2 1/2 teaspoons salt, divided 1 cup grated carrots 1 (10 3/4-oz.) can cream of chicken soup 1 (8-oz.) container sour cream 1 (8-oz.) can water chestnuts, drained and chopped 1 (8-oz.) package herb-seasoned stuffing 1/2 cup butter, melted

Preparation: 1. Preheat oven to 350. Cut squash and zucchini into 1/4-inch-thick slices; place in a Dutch oven. Add chopped onion, 2 tsp. salt, and water to cover. Bring to a boil over medium-high heat, and cook 5 minutes; drain well. 2. Stir together 1 cup grated carrots, next 3 ingredients, and remaining 1/2 tsp. salt in a large bowl; fold in squash mixture. Stir together stuffing and 1/2 cup melted butter, and spoon half of stuffing mixture in bottom of a lightly greased 13- x 9-inch baking dish. Spoon squash mixture over stuffing mixture, and top with remaining stuffing mixture. 3. Bake at 350 for 30 to 35 minutes or until bubbly and golden brown, shielding with aluminum foil after 20 to 25 minutes to prevent excessive browning, if necessary. Let stand 10 minutes before serving.

Merles Minutes
Hey everybody! I hope everyone has been doing well since our last meeting. I have been doing great. Summer has gone by so fast. I had a great summer vacation this year. My family went to Cherokee, NC and Pigeon Forge, TN. We stayed a few days in Cherokee, and then we stayed at the Wilderness in the Smokies. It was wonderful. It is a hotel that has its very own water park. I highly recommend it for those of you that love the mountains and love to swim. I hope you all were able to rest up this summer. I didnt do a lot of resting. I cant sit still too long. I canned some tomatoes and salsa this summer. The yard work keeps me pretty busy too, but it is too hot to do too much lately. I hope you can all bring something for our marketplace auction. If you cannot bring anything homemade, just try to bring something. Dont forget our very special project of collecting school supplies for Manchesters Mountain View Elementary School that was damaged in the tornado storms. Hope to see you soon, Merle

Donations for Projects to Be Collected At August Meeting
Beta Gamma Chapter is helping Psi State celebrate its 75th anniversary by collecting at least 75 school supplies that will be distributed to the local schools. The schools supplies collected this year will be given to Manchesters Mountain View Elementary School that was damaged during the tornado storms. Please remember that we have Beta Gamma sisters that work in this school and lost everything. We will continue our projects of childrens book and Bingo prizes. Great Bingo prizes are individual packs of sugar free and regular snacks like crackers or cookies. The donations for this months Bingo prizes will go to the local nursing homes of the Thomaston area. Collection boxes will be located near the sign-in table at our March meeting. You will want to be part of these worthwhile projects. Please be sure to mark your calendar with a reminder to bring donations!
