Enzyme Background and Application Enzymes are proteins that facilitate or catalyze biochemical reactions in the body. Digestive enzymes help break down dietary macronutrients such as proteins, fats and carbohydrates upon entrance to the digestive system. This must occur in order for the body to absorb macronutrients. Many people produce less digestive enzymes as a result of age or disease. Both papain and bromelain possess such strong activity, they are used commercially as meat tenderizers due to their ability to act on and break down proteins. Papaya and Papain Papaya contains many naturally occurring enzymes including papain, chymopapain A and B, proteinase A and B, papaya peptidase A, lysozyme, chitotransferase, glycosidases, callase, pectinesterases, lipases, phosphatases, and cycloligases. These help digest proteins and fats. Bromelain Bromelain consists of proteolytic enzymes found in the fruit, stem and leaves of the pineapple plant. In addition to supplying cysteine protease, it contains acid phosphatase, peroxidase, amylase and cellulase2. It can act under a wide pH range of 3-10 and appears to be absorbed in the intestine since it may not be inactivated by gastric juices in the stomach.
