CHAMPAGNE
Based upon 3 grapes, Chardonnay, Pinot Noir and Pinot Meunier, Champagne has many styles and is a very cool region producing
wines with excellent acidity based upon the blending of different vineyards and grapes. Champagne styles vary based upon sweetness of
the wine, the blend of the grapes used and the length of aging the final blend receives.
SPARKLING WINE
METHODE CHAMPENOISE
The more general “sparkling wine” label can be very broad in meaning. The wines listed below are all by the traditional “methode
champenoise”, the same process by which true champagnes are produced. These sparklers, however, are produced outside the
Champagne region of France, and thus are given the more general label. Wines produced in this style from outside Champagne can be
excellent values and represent some wonderful styles and locations.

Burgundy
Steeped in history and with a vineyard ownership situation more fragmented than any other area of France, Burgundy can
be a confusing wine region to learn about. One thing is certain, however; nowhere else in the world does the Pinot Noir
grape achieve the success that it does in Burgundy. Due to the vast amount of landowners and growers present in
Burgundy, the producer has become an extremely important clue as to the quality of a particular wine.

Super Tuscans
One of the most revolutionary aspects of Italian wine production over the last twenty-odd years has been the rise of the
Super Tuscans. These wines are non-traditional wines from Tuscany that fall outside of classic regulations for wine

AMERICAN RED WINE
PINOT NOIR
More than any other popular grape, Pinot Noir has a reputation for being a headache because of its fragile
quality and its difficulty to grow and work with. However, the payoff can be extraordinary. The great red wines
of Burgundy are made from Pinot Noir, the best Champagnes are, in part, made from Pinot Noir. The United
States, namely California and Oregon, have undergone a tremendous amount of experimentation in terms of
location of planting and production techniques. The results have been wonderful.
