Introduction

The word ‘hospitality’, according to Oxford English Dictionary, is the friendly reception and

treatment of friends, guests and strangers. Even though this sector comprises mainly of

lodging and F & B division, in a wider sense the word can be used as a synonym for travel

and tourism industry. In this lesson we will discuss more about the history of the food

service industry

History

The evolution of food is fascinating as it is mirrored on the social and economic times in

which we live in.

During the early days when the world was at war, soldiers had to carry with them food in

order to survive. As they conquered other countries, the warriors brought with them food

from their opponents’ territories.

An early type of restaurant begun during the 16 th century BC in Paris France and was

probably one of the oldest activities in commerce. The first public restaurant before 1765

perhaps offered food services to the public. The caterer formed guild union to protect them

from unscrupulous competition. This was when a soup vendor who prepared a soup made of
sheep’s foot and white sauce was brought into court. But ruled out that his specialty dish

did not compete with any dish prepared by the guild and the vendorwas allowed continue

because of this publicity .the vendors soup kitchen became famous that even the King of

France wanted to taste the specialty that created public commotion. The soup vendor

merchandise the soup as “ le reastaurant divine” – meaning the divine restorative, coming

from the Latin word resturare meaning “to restore”. This gave u the word restaurant, which

is a place to restore health.

In the year 1827In New York City the first credited restaurant in United States was

Delmonico. The Delmonico family operated 9 restaurants until 1923 the restaurants were

known for lavish banquet an extensive menu of 371 dishes.

A person by the name of John Naisbitt predicted that there would be unprecedented

diversity in the hospitality industry because most societies progressively bank on services

and information providers, and that specialty an even ethnic restaurants would come about

to satisfy customer needs. Likewise ,another prediction what's that various catering type

would emerge by the end of 20th century the people working for it would be trained ask

each establishment provided satisfaction so its customers by way of dining experience –

sumptuous food ,stylish presentation ,elegant service an impeccable ambiance

with highly trained employees an excellent service that has been provided in a courteous or

spreadable way
