La nostra storia inizia nel 1936, quando Francesco Vitaloni apre a Milano
una rosticceria intitolata a San Carlo. Ben presto la sua fama si difonde
in tutta la città, grazie ad una specialità rivoluzionaria per quei tempi :
“le patatine croccanti”, ovvero patate di prima qualità, sbucciate, tagliate
a fettine sottili, cotte e spolverate con un pizzico di sale.
Oggi, dopo ottant’anni, torna l’autentica ricetta delle patatine che hanno
fatto la storia. Il segreto del loro gusto inconfondibile è sempre lo stesso:
farle con l’attenzione e passione di una volta.
Perché per certe cose vale la pena aspettare. Anche 80 anni.

Our history began in 1936, when Francesco Vitaloni opened a rotisserie
in Milan entitled to San Carlo. Soon it became popular all over the town,
thanks to an outstanding specialty: “crunchy chips”, top quality potatoes
peeled, sliced, cooked and sprinkled with a pinch of salt. Today, after 80
years, the authentic recipe of those history-making potatoes is back.
The secret of their unique taste is still the same: they are made today with
the same passion and care as in the good old days.
Some things are just worth waiting for. Even for 80 years.

 Una cosa che ho sempre ammirato degli
aerei è che sono l’unico mezzo di tra-
sporto che non preveda la retromarcia,
è rigorosamente obbligato a ‘guardare’
avanti. Questa visione è molto simile
alla mia filosofia, non mi volto mai
indietro, mi porto le cose buone del
passato come bagaglio personale, ma
tendo sempre a guardare dritto. Sono
fortemente convinto che sia l’unica pos-
sibilità per poter proseguire un percorso
di crescita umana e professionale.
Vorrei ringraziare Alitalia che mi ha dato
per due anni la possibilità, attraverso le
pagine del suo magazine, di potervi in-
contrare e raccontare il nostro personale
modo di vedere la vita e il mondo e di
attraversare i sentieri delle eccellenze
italiane in ogni settore, facendovi vi-
vere emozioni, regalandovi sensazioni
uniche. Abbiamo viaggiato insieme e
assieme siamo andati alla scoperta di
luoghi e persone che hanno contribuito
ad arricchire il nostro e, spero, anche il

Diamo il benvenuto ad Andrea Bram-
billa, il nuovo Direttore Responsabile
che saprà portare Ulisse ancora più in
alto, perché cari viaggiatori questo è solo
il primo passo per tornare protagonisti

zione a voi che ci avete affettuosamente

La Milano Fashion Week ha visto un nuo-
vo brand: Edhèn Milano, una collezione di
calzature lusso dall’animo dandy, pensata
per un moderno gentiluomo metropoli-
tano. Due blogger raffinati come Filippo
Fiora e Filippo Cirulli non potevano che
proporre sneakers delicate, mocassini in
tweed, colori brillanti, suede e dettagli
preziosi. Un paradiso per gli amanti del
genere.

EDITORIALE A thing I’ve always admired about air-
craft is that they’re the only means of
transport that doesn’t have a reverse
gear, so is strictly obliged to go ever
forward. That pretty much sums up my
own view of things, never look back,
only carry the good things from the past
in your personal baggage and always
look ahead. I’m convinced that this is
the only way proceed on our personal
and professional paths through life.
I’d like to thank Alitalia for having
given me the chance to talk with you
all about our own personal ways of see-
ing things through the pages of their
magazine for these last 2 years, and
to cross paths with some of the excel-
lences of Italy in every field, as well
as for giving you the chance to experi-
ence the unique emotions they instil.
We’ve travelled together in search of
the places and people who’ve contrib-
uted to enriching our views and I hope,
our knowledge of culture as well.

Questa incredibile foto, che sembra un dipinto, è una delle im-
magini vincitrici tra le 18 categorie in concorso per il Wildlife
Photographer of the Year indetto dal Natural History Museum
di Londra, giunto ormai alla sua 51esima edizione. Quest’anno
hanno partecipato ben 42.000 concorrenti. Nell’immagine cattu-
rata in Israele vicino a Beit Shemesh, vediamo assieme tre falchi
cuculo, che pur migrando in gruppo di solito non condividono
i propri spazi. Qui, incredibilmente, si vedono due femmine in
compagnia di un maschio, molto fortunato! In Valle d’Aosta, al
Forte di Bard, potrete vedere le foto più belle del concorso, fino

FLYING IS BETTER IN COMPANY
This incredible photo, which looks more like a painting, is one
of the winning images of the 18 categories in the “Wildlife
Photographer of the Year” competition called by the London
Natural History Museum, now in its 51st year. This year no
less than 42,000 entrants took part in the competition. In this
photo, taken in Israel near Beit Shemesh, we see three red-
footed falcons, which while migrating in groups usually don’t
share their airspace. Incredibly, here we see two females ac-
companied by a (very lucky!) male. You can see all the best
photos from the competition at the Fort of Bard, in Valle

U
n viaggio nella regione Calabria significa soprattutto
scoperta. Le tradizioni del passato vivono ancora oggi in
qualunque luogo della regione, soprattutto nell’entroterra,
dove la penetrazione di culture esterne è stata più lenta.
A pochi chilometri dall’aeroporto di Reggio Calabria si trova
il Museo Archeologico Nazionale e, anche per chi è solo di
passaggio, una visita è un’occasione da non lasciarsi sfuggire. In
una sala appositamente realizzata s’innalzano i Bronzi di Riace,
due opere d’arte famose in tutto il mondo.
Scoperti nel 1972 da un appassionato subacqueo in vacanza in
Calabria, le due sculture in bronzo sono state svuotate dell’interno
per evitare pericolosi fenomeni di corrosione.
Nel Museo Archeologico Nazionale di Locri, oltre ad alcuni
reperti di grande importanza come il cosiddetto “Togato”, è
possibile esplorare il Museo dei Ragazzi che racconta la storia
e la vita quotidiana che si svolgeva più di 25 secoli fa nella città
di Locri. Camminando lungo le pendici del monte Consolino,
si erge la misteriosa città di Stilo (RC). Quasi all’improvviso,
si scopre uno dei luoghi più spettacolari della Calabria sia per
posizione geografica che per stile architettonico, la Cattolica di
Stilo. La chiesa bizantina fu costruita intorno all'anno Mille dai
monaci orientali che vivevano esclusivamente di erbe raccolte
sul monte e che diffusero la religione e la lingua greca presso le
popolazioni indigene dell’epoca. L’itinerario alla scoperta della
Calabria continua ancora per chilometri e chilometri, regalando
a ogni passo un’emozione nuova.

A VOYAGE OF DISCOVERY INTO A MYSTERIOUS PAST
A journey through the region of Calabria means Discovery first
and foremost.
The traditions of the past live on today in all parts of the region,
and especially the hinterland where the penetration of outside
cultures has been slower.
Just a few kilometres from Reggio Calabria airport you find the
National Archaeology Museum, a visit to which is absolutely
unmissable even for day-trippers, because in a specially built
hall you can find the Riace Bronzes, two world famous works
of ancient art. Discovered in 1972 by an amateur scuba diver on
vacation in Calabria, the two bronze sculptures were conserved
by emptying them of the lead and foundry earth they contained
to prevent damaging corrosion. In addition to numerous relics
of great importance, such as the so-named “Togato”, at the
National Archaeological Museum of Locri you can explore the
Children’s Museum with lots of exhibits telling the story of what
life was like in the city of Locri 25 centuries ago. Walking in the
foothills of Mount Consolino you can discover the mysterious
city of Stilo (RC), which surprisingly offers one of the most
spectacular sites of all Calabria, both for its position and its
architecture, the Cattolica di Stilo. This Byzantine church was
erected in the 9th century by Eastern monks who lived only on the
herbs they gathered on the mountain, spreading their religion and
the Greek language in the local population of the time.
The voyage of discovery into Calabria goes on for miles and
miles, each one offering a new sensation.

Eight-month-long series of classical concerts and performances
by some of the world’s leading musicians and orchestras in
Western and Eastern classical music.
With a new and expanded programme of 26 performances in the
UAE capital, Saadiyat Island, Liwa desert and historic sites in
the emirate’s heritage heartland of Al Ain, the new season will
run until May.
One of classical music’s greatest stars, the Argentinian/Swiss
pianist Martha Argerich, together with violin virtuoso Gidon
Kremer and his Baltic string ensemble, Kremerata Baltica will
debut their first appearance in the Gulf region in February while
the world-leading Gustav Mahler Youth Orchestra will play
three concerts dedicated to Beethoven’s Symphonic work and to

UNA CAPITALE SOSPESA TRA UNA STORIA MILLENARIA E UN FUTURO CHE È GIÀ QUI,
NONOSTANTE LA CRISI.

éveille-toi Athèna”, cantava con quella sua voce roca e in-
confondibile Melina Mercouri, atemporale icona ellenica,
rivolgendosi alla propria amatissima città. E Atene, anche
oggi che porta il peso della difficile situazione economica che
attraversa la Grecia intera, continua a non dormire e a regalare
tante sensazioni e sorprese a chi la voglia scoprire oltre i suoi
sublimi cliché archeologici. Certo, rimane imperdibile una visita
alle ricchissime raccolte del Museo Archeologico Nazionale e
l'ascesa - meglio se programmata di prima mattina o al tramonto
- fino all'Acropoli per vedere da vicino il Partenone. L'edificio
simbolo di quella che nel V secolo a.C. era la civiltà più avanzata
del mondo e che, sebbene oggetto di studio da tempi immemora-
bili, tuttora custodisce molti lati oscuri sui metodi di costruzione
che vi sono stati impiegati. Ai piedi dell'Acropoli e a stretto

Timeless Greek icon Melina Mercouri, in her unmistakeable
hoarsely voice sang “Réveille-toi Athèna” to her beloved city.
And Athens, even now straining under the weight of the immensely
difficult economic crisis affecting the whole of Greece, still doesn’t
sleep and offers so many emotions and surprises to those wish-
ing to discover her beyond her sublime archaeological clichés.
Sure, a visit to see the immensely rich collections of the National
Archaeological Museum is absolutely unmissable, just as the
climb (better if scheduled early morning or late afternoon) up
to Acropolis to see the Parthenon. Despite being studied since
time immemorial, this building-symbol of what was the world’s
most advanced civilisation in the 5th century before Christ, still
holds many secrets as to how it was actually built. Close by the
Acropolis lies the beautiful museum dedicated to it, established

sato da Bernard Tschumi, emozionante specialmente in certe gior-
nate invernali dalla luce metafisica, quando è silenzioso e semide-
serto di visitatori (theacropolismuseum.gr). La passeggiata verso
l'Acropoli è un must, grazie alle ampie arterie totalmente pedo-
nali che si snodano nel verde, punteggiate di caffè e ristoranti ai
suoi bordi a meridione e a occidente, sulla via Apostolou Pavlou
nel quartiere di Thission e lungo il viale Dionissiou Aeropagi-
tou a Makrianni. Atene diventa molto più godibile e vera fuori
dalla confusione babelica della stagione estiva. Incastonato alle
pendici dell'Acropoli, il teatro di Erode Attico, costruito dai
Romani nel 161 d.C. è ancora attivo. Durante il periodo esti-
vo e fino all'autunno vi si svolge un festival di speciale rilievo
(greekfestival.gr). Dovrebbe essere pronto nel 2017 il grandioso
Centro per le Arti e la Cultura della Fondazione Stavros Niar-
chos, con la nuova Opera e Biblioteca Nazionale, progettate a
Falero da Renzo Piano all’interno di un parco di 17 ettari (snf.
org) che promette addirittura di influire positivamente sul clima

is truly metaphysical (theacropolismuseum.gr). The walk to the
Acropolis is a must, especially for the broad entirely pedestrian
avenue winding up the green sacred mount, punctuated by cafes
and restaurants along its southern and western reaches on Apos-
tolou Pavlou avenue in the Thission quarter and along Dionissiou
Aeropagitou avenue in Makrianni. Athens becomes much more
enjoyable and real outside the babelish confusion of the summer
season. Set on the slopes of the Acropolis, the Odeon of Herodes

Athenian nightlife is full of new attractions, especially in the many
porticoed passageways weaving through the centre of the city,
giving it an evocative, oriental feel. Alongside legendary places
like the Galaxy, miraculously with the same decor and bartenders
from the ‘sixties (not to be confused with the super-panoramic
360° roof terrace of the Hotel Hilton Athens, forever famous for
cocktails and whisky and frequented by intellectuals, journalists,
writers and artists), you can find highly specialised spots like the
Gin Joint, offering no less than 56 different brands of gin, and
the Low Profile Whisky Bar, its walls adorned with portraits
of Miles Davis and Tom Waits, which offers more than sixty dif-

lucidi pavimenti a terrazzo.
Tra le location più amate a tutte le ore, nel cuore dell'immenso
edificio déco che ospita i grandi magazzini Attica e che contiene
la vasta corte interna Spyros Milios (a due passi da Piazza Syn-
tagma), si concentrano l'elegante City Bistro, l'antistante City
Bar, affollato fin dal primo mattino e Pasaji, molto in voga specie
per il lunch, grazie alla cucina che intreccia fragranze greche e
mediorientali a un ottimo sushi. Infine, il tempio dell'espresso
gourmand, Café Clemente. Chrysantos Panas, con il fratello
Spyros (panasgroup.gr) è il proprietario di due tra gli indirizzi
cult ateniesi, Salon de Bricolage, e il club-restaurant Island, a
Varkiza, vicino Vouliagmeni, stupendo angolo di costa con mare
cristallino quasi cicladico, letteralmente a due passi dalla me-
tropoli, meta costante di celebrità internazionali e bella gente
varia. Nel novembre scorso, Panas, che giura su un'autentica
renaissance della capitale greca già in atto, tra via Voukourestiou
e via Panepistimiou ha ridato vita ai fasti del celebrato Zonars,
luogo d’incontro per l’intellighenzia ellenica e internazionale.
Il City Link dove il locale si trova oggi rappresenta la temperatura
e il rinnovato slancio di Atene.
Zonars, si reinventa con l’architettura dei fratelli Karabatakis e dal
geniale designer Michael Anastassiades. Atene, dunque, sospesa
tra una storia millenaria e un futuro che è già qui. Crisi o non
crisi, graffito dopo graffito, la capitale ellenica è un laboratorio
che seguita con ostinazione a gettare ulteriori sfide e ad aprire
innovativi territori e appartenenze inaspettate.

a magnificent choice of music often rounded off by concerts and,
still on the same street, you’ll find the Noel bar-restaurant with its
decadent vintage atmosphere, ‘sixties decor, kitsch lampshades
and gilded cornices, the purple and British green in net contrast
with the polished terrace floors. One of the best loved locations
at any time of the day is in the heart of the immense deco building
that houses the Attica department stores and has the vast Spyros
Milios internal courtyard (a short stroll from Syntagma square),
where you can find the CityBistro, the neighbouring City Bar,
packed from early morning onward, and Pasaji, very much in
vogue especially for lunch thanks to its particular cuisine that
weaves Greek and middle-eastern aromas with an amazing sushi,
and lastly the temple of the gourmand espresso, the Café Clem-
ente. Chrysantos Panas, with brother Spyros (panasgroup.gr) is
the owner of two cult Athenian addresses, Salon de Bricolage,
and the club-restaurant Island in Varkiza, close by Vouliagmeni, a
stupendous corner of the coast with a crystalline almost Cycladic
sea, literally two steps away from the city and constant destina-
tion of international celebrities and beautiful people in general.
Last November between Voukourestiou avenue and Panepisti-
miou avenue, Panas who swears by an authentic renaissance of
the Greek capital, breathed life back into the splendour of the
celebrated Zonars, meeting place of Athenian and international
intelligentsia. The City Link where the cafe is now represents the
climate and renewed verve of Athens. Zonars has reinvented itself
thanks to the architecture of the brothers Karabatakis and ingen-
ious designer Michael Anastassiades. So Athens lies suspended
between a history thousands of years long and a future already
here. Crisis or no crisis, graffiti on graffiti, the Greek capital is
a workshop obstinately striving to lay down challenges, opening
new horizons and striking surprising alliances.

emo Ruffini è il presidente e amministratore delegato di
Moncler. Vive con la famiglia, la moglie Francesca e i figli
Pietro e Romeo tra Milano e Como, sua città d'origine. Ap-
partato, riflessivo e passionale insieme, temperamento proclive
alle sfide, Ruffini ama molto i viaggi e lo sport, dividendosi tra
il mare e la vela d'estate, lo sci e la montagna d'inverno. Profes-
sionalmente si forma tra l'Italia e gli Stati Uniti. Nel 2003, con
un vero atto di fede, rileva Moncler, storico marchio francese
specializzato nella produzione di duvet, del quale intraprende il
rilancio internazionale. I risultati, eccezionali, oggi sono sotto
gli occhi di tutti. La progressiva reinvenzione di un brand che,
grazie alla lungimirante visione imprenditoriale e al contempo
sempre estremamente creativa di Ruffini, dopo solo un decennio,
nel 2013, è stato quotato in borsa sulla piazza di Milano.

Remo Ruffini is Chairman and CEO of Moncler. He lives with his
family, wife Francesca and children Pietro and Romeo, between
Milan and Como, his home town. Reserved, reflective but pas-
sionate as well, he has a propensity for challenges, loves travel-
ling and sport, dividing himself between the sea and sailing in
the summer, mountains and skiing in the winter. He developed
in a professional sense between Italy and the United States. In
2003, with a true leap of faith he took over Moncler, the historic
French brand specialising in down jackets, taking responsibility
for the brand’s international re-launch. The (exceptional) results
of his efforts are there for all to see. The progressive reinvention
of a brand that in 2013, after just a decade of Ruffini’s far-seeing
and extremely creative entrepreneurial ability, was floated on the
Milan stock exchange.

2003, quando acquisisce un brand dalla
percezione lievemente appannata e Anni
80, legato alla parabola ‘paninara’ e a una
stagionalità apparentemente inderogabile,
la musica subito cambia. Moncler oggi si-
gnifica universalmente sperimentazione,
ricerca su nuove tecnologie, materiali e
linguaggi estetici, know how inimitabile,
sguardo attento verso il futuro. Oltre a
un risultato economico che ha ben pochi
precedenti. Remo Ruffini, classe 1961,
perennemente in blu di varie gradazioni,
il suo colore feticcio - quello tra l'altro del suo prediletto e im-
mancabile giubbotto Longue Saison, che indossa per gran parte
dell'anno - con la tavolozza dei grigi e con una sfumatura spor-
tiva ‘waspy’, ha inventato l'idea stessa del piumino ‘globale’,
versatile passe-partout per ogni occasione. Lo ha fatto diventare
un oggetto di culto e un riferimento di stile. «Fin dall'inizio»,
racconta Ruffini: «La mia è stata una strategia integrata, una
combinazione del lato imprenditoriale e di mercato con una va-
riegata sensibilità creativa in continuo superamento. I dati di
forza di questa visione sono l'alta qualità del prodotto e della co-
municazione, resa peculiare, oltremodo diversa e riconoscibile,
accanto a delle linee estetiche capaci di parlare direttamente al

Before he came on the scene it was only about
quilted jackets, or duvets if you prefer. But in
2003, when he acquired a brand whose im-
age had become slightly tarnished, associated
more than anything with the very ‘eighties
‘paninara’ fashion trend and stuck in a man-
datory single season, the music changed im-
mediately. Nowadays Moncler is universally
acknowledged for experiment, new technol-
ogy, materials and aesthetic languages, in-
imitable know-how and its forward-looking
attitude. Not to mention economic results few
brands have ever achieved.
Remo Ruffini, Como born, class of ‘61, peren-
nially dressed in various shades of blue, his fetish colour (and the
colour of his favourite and inevitable Longue Saison jacket that
he wears most of the year) and shades of grey with some sporty
‘waspy’ nuances, personally invented the concept of the ‘global’
duvet, a versatile passe-partout for any occasion. He turned it into
a cult item and style reference. «Right from the start», he tells us:
«mine was an integrated strategy, a combination of enterprise and
market with a variegated creative sensitivity in continual growth.
The strongest points of this vision are the high quality of the prod-
ucts and the communications strategy, made special, different
and particularly recognisable through aesthetic lines capable of
talking straight to our times.

cui abbiamo collaborato e lavoriamo, che
sia un designer, un artista, un fotografo, deve apportare la propria
visione e un tocco personale al brand. Ma ognuno di essi deve

linguaggio comune: l'universo Moncler. Sono passati in tanti da
noi. Da Balenciaga a Junya Watanabe, da Alessandra Facchinetti

but not necessarily renounce it, and take on a
more markedly metropolitan character». He
goes on: «Then again, the heritage and his-
tory of Moncler, founded by the mountaineer-
entrepreneur René Ramillon in Monestier de
Clermont back in 1952, is truly unique. I think
it’s rare to find a brand with roots sunk into
such a strong tradition. Right from the start
I worked directly on each individual creative
aspect of the brand, from the various phases
of creating the product right up to the com-
munications.
Each individual talent we worked, and still
work with, whether they be designers, artists
or photographers, had to contribute their own vision and a per-
sonal touch to the brand, while bearing in mind a single central
concept and using a unique, common language: the Moncler uni-
verse. We’ve worked with many great names, from Balenciaga to
Junia Watanabe, Alessandra Facchinetti and Christopher Ræburn
to Chitose Abe for Sacai, up to Mary Katranzou and emerging
stylists like Erdem and Alexandre Mattiussi forAMI.

tore del recente progetto benefit a sostegno
di AmFar, della mostra a NYC e del libro
"Art for Love" che ha coinvolto oltre 30
dei maggiori fotografi come Bruce Weber
e Annie Leibovitz, autori di epocali campagne pubblicitarie. E
per l'inaugurazione del nuovo flagship store di Ginza a Tokyo,
avvenuta nell'ottobre scorso, la collezione è stata appositamente
pensata dal giovane duo di artisti californiani FriendsWithYou.
Ruffini non si ferma mai, sorriso aperto e carattere d'acciaio,
confessa di amare specialmente: «Quel profondo surreale silen-
zio che esiste soltanto ad altitudini molto elevate, dove l'aria è
rarefatta e il gelo assoluto. É quello che mi piace definire come
il mio personale dono di lusso, una magnifica fuga dalla mia
vita febbrile e piena di impegni». Quali saranno le prossime
frontiere da affrontare per Remo Ruffini e il gruppo Moncler?
«Innanzitutto punteremo su una presenza sempre più bilanciata
in Europa, Giappone, zona Asia-Pacifico, Corea e Americhe,
negli USA in primo luogo, dove nel 2015 abbiamo aperto ben
cinque monomarca. Tra il 2016 e il 2018 ci proponiamo di essere
presenti almeno con un flagship store in ogni fashion district
delle città più prestigiose e interessanti del pianeta. Con un du-
plice target - conclude Ruffini - incrementare la fidelizzazione
della nostra clientela aumentando al contempo la produttività
dei negozi Moncler».

Jacket”, this veritable capsule connection has been
developed for the fall/winter 2016-2017, and is en-
tirely dedicated to travel. The main features of the
capsule derive precisely from the stylistic originality
of the “Connemara Jacket”: in hi-tech stain-proof,
crease-proof, waterproof fabric, custom linings with
travel-friendly pockets for documents and tickets, a
detachable pocket with an emergency rain hood and
jacket carrier-sack. A universal fabric was specifical-
ly developed for this ‘travel capsule’, that adds an
extra touch of comfort to the jacket’s tried and trusted
properties in the form of stretch wool. The pure wool
suit, strictly in blue, is in Rip-Stop fabric making it
tear-proof. The capsule also presents a grey trou-
ser, a 100% waterproof overjacket with wind-stop
membrane and a short coat, again in stretch wool.
All the linings have ‘strategic’ pockets and carrier-

RAPALLO: THE ROMANTIC FASCINATION OF THE WINTER SEA

el periodo della Belle Époque, Rapallo era già nota come
la 'Perla del Tigullio', frequentata dai primi turisti balneari
di una raffinata élite. Sul lungomare e tra i ‘caruggi’, le
tipiche viuzze del centro storico, si passeggia tra gli antichi edifici
dagli affreschi color pastello. È rimasto immutato il piacere di
prendere un aperitivo nei dehors affacciati sulle piazzette o di
fronte al mare, nella mitezza del clima che qui si ritrova anche
d'inverno. Di fianco al Castello sul Mare, simbolo della città,
si può iniziare una romantica passeggiata con vista sul bel mare
ligure, e alternando i passaggi lungo le spiagge a quelli protetti
dall'ombra di mura e piante, si svelano a noi solide residenze
ottocentesche e costruzioni Art Déco, testimoni di storie illustri e
antichi fasti. Uno scenario affascinante che, seguendo il sentiero
fino alla Baia dei Sogni, sembra non essere mai cambiato; solo il
costante lavorio della salsedine sugli intonaci affacciati alle onde
trasmette il senso del tempo in divenire. Grazie a queste ‘prome-
nade’ nel passato molti scrittori hanno trovato l’ispirazione. In
un piccolo hotel di charme a pochi passi dal mare Hemingway
scrisse “Gatto sotto la pioggia” e ospitò Ezra Pound, legatissimo
a queste zone. Diversi Nobel scelsero la città per le loro vacanze:
W.B. Yeats, Gerhart Hauptmann o Gabriela Mistral. Rimanendo
in tema di paesaggi indimenticabili, dal centro città parte una
funivia che sale agli oltre 600 metri del Santuario di Montalle-
gro, edificato per celebrare l'apparizione mariana avvenuta nel
1557. Dal suo piazzale lo sguardo spazia da Portofino a Rapallo,

In the Belle Époque, Rapallo was known as the “Pearl of Tigullio”,
frequented by the first bathers of a refined élite as they strolled along
the seafront through the ‘caruggi’, the characteristic alleys of the
historic centre, past buildings decorated with pastel hued frescoes.
Little has changed in the pleasure of an aperitif at a table outside one
of the bars facing onto the little squares or the sea, or the mildness
of the climate, even in winter. You can begin a romantic walk from
the Castello sul Mare (the castle on the sea), the city’s symbol, with
wonderful views to the beautiful Ligurian sea, alternating between
beaches and secluded paths, occasionally catching glimpses of the
robust Art Decò buildings veiled by walls and greenery, testimonies
to the town’s illustrious history and former splendours. A fascinating
scenario that all the way to the Baia dei Sogni (the Gulf of Dreams)
seems never to have changed, with only the untiring action of the
salt spray on the plaster and stucco work facing the waves betray-
ing the passage of time. Many great writers of the past have found
inspiration on this ‘promenade’. Amongst its guests , a charming
little hotel close to the seafront boasts Hemingway, who wrote “Cat
in the Rain” there, and Ezra Pound, who had intense ties with the
region. And many Nobel prize-winners chose the city for their va-
cations: W.B. Yeats, Gerhart Hauptmann and Gabriela Mistral to
name but three. On the subject of unforgettable walks, from the city
centre you can take a cable car that rises over 600 metres to the

Amalfitana e Sorrentina - sono la meta ideale per una fuga
di coppia, anche d’inverno. Il nostro ‘approdo’ è la pittoresca

a dorata pietra locale che riveste i palazzi, l’eleganza barocca
delle piazze, il tramonto che riscalda l’atmosfera cittadina: a
Lecce ogni cosa, ogni forma, ogni colore, colpiscono i sensi
e l’immaginazione. La capitale del Salento, a 34 km dall’aero-
porto di Brindisi, è una destinazione ideale per chi è interessato
alla cultura, per chi ricerca oggetti originali, ma soprattutto per
chi vuole condividere l’atmosfera romantica di un viaggio in
coppia. La nostra base di partenza è la Casa di Lo, raffinato
B&B in un palazzo ottocentesco a due passi dalle principali
attrazioni (casadilo.it).
Prima di partire, mano nella mano, gustiamo una barchetta ri-
piena di crema, il Pasticciotto, nello storico bar Alvino, nella
centralissima piazza S. Oronzo. Da qui ci incamminiamo verso
il Castello Carlo V e l’originale Museo della Cartapesta, che
racconta la storia di un’arte davvero antica, altra passione tutta
salentina (via XXV luglio 32). Le signore vorranno senz’al-
tro andare in giro per negozi e trovare qualcosa d’originale.
Come le raffinate sciarpe, le mantelline, gli scialli leggerissimi,
le borse, i cappelli, tutto fatto a mano ed esposto in un tipico
spazio salentino, a grotte, da IJO'design di Annalisa Surace.
Dopo una passeggiata nella romantica piazza Duomo, salot-
to dei leccesi e scenografia d’impeccabile eleganza, su cui si
affacciano la Cattedrale, il Vescovado e il palazzo seicentesco
del Seminario, concludiamo la serata, ovviamente a lume di
candela a Il Giardino Ristorante (ilgiardino-ristorante.it) con
qualche specialità salentina, accompagnata da rossi e rosati di
uve negramaro. Dopo cena potremo assistere a uno spettacolo

the piazzas, the sunsets that warm the atmosphere in the city: in
Lecce, every shape, every colour seems deliberately designed to
fire the senses and the imagination. The capital of Salento, 35 km
from Brindisi airport, is the ideal destination for seekers of culture,
original crafts and above all the perfect romantic atmosphere for
an escape just for two. We chose the Casa di Lo as our home base,
an elegant B&B in a nineteenth century period building close by
all the main attractions (casadilo.it). Before setting out into the
city hand in hand, we try a local delight, a Pasticciotto (a cream-
filled little boat) at the historic bar Alvino in the central piazza S.
Oronzo. From there we stroll to Castello Carlo V and the unique
Museo della Cartapesta (papier-mache museum) that tells the
story of a truly ancient art popular throughout the entire Salento
region (via XXV luglio 32).
Our partners want to do a bit of shopping for something original,
so we head for IJO'design for elegant shoes, the lightest cloaks
and shawls, bags and hats, all hand-made by Annalisa Surace
and on sale in this typically Salento grotto-like space. After a
stroll through romantic piazza Duomo, an impeccably elegant
setting and meeting place of the Lecce people bordered by the
Cathedral, the Vescovado and the sixteenth-century Seminary, we
end the evening, obviously by candlelight, at the Giardino Ris-
torante (ilgiardino-ristorante.it) enjoying Salento specialities
accompanied by reds and rosés made from negramaro grapes.
After dinner we choose between an avant-garde event at the
Cantieri Teatrali Koreja (teatrokoreja.it) or a dance at the

piacerà tantissimo - per produrre cosmetici naturali. Si dorme in
raffinate camere tra arredi artigianali, si cena a lume di candela

visitiamo Martano e gli altri paesi barocchi della Grecìa Salen-

al Museo della Cultura Grika, a Calimera. Prima di una pas-
seggiata al mare facciamo anche una sosta enogastronomica a
Scorrano, sede della cantina Duca Carlo Guarini, che produce
vini, olio extravergine d’oliva e ottime conserve (ducacarlogua-
rini.it). Da qui in 30 minuti d’auto siamo a Porto Cesareo, dove
il tramonto sullo Jonio nella baia di S. Isidoro, verso Nardò,
è uno spettacolo imperdibile. Ceniamo al ristorante del Dune
Suite Hotel assaggiando i piatti dello chef Cosimo Russo. Un

ella cittadina ligure di Sanremo si terrà, dal 9 al 13, il Festi-
val della Canzone Italiana, arrivato alla 66esima edizione.
È l’appuntamento musicale italiano per antonomasia non-
ché l’evento TV dell’anno, trasmesso in mondovisione. Incon-
triamo il suo conduttore, Carlo Conti - già reduce dal successo
dello scorso anno - nel mezzo del tourbillon dei preparativi,
nella storica sede RAI di Corso Sempione a Milano. Ma ciò
nonostante, con quella sua cortesia semplice e un po’disarmante,
ha fatto uscire tutti, chiuso la porta di un improvvisato camerino
e in mezzo a decine di giacche e abiti da provare si è seduto e
ha cominciato amabilmente a chiacchierare per noi di Ulisse.

TAKING STOCK OF THE SANREMO FESTIVAL
In the Ligurian city of Sanremo Italy’s most famous song festival,
now in its 66th year, is scheduled to be held between the 9th and
13th this month. It’s the quintessential Italian music festival, not
to mention the TV event of the year, broadcast worldwide. We met
its presenter, Carlo Conti, veteran of last year’s highly success-
ful edition, in the midst of the flurry of preparations for the event
at the historic RAI TV headquarters in Milan’s Corso Sempione.
Despite all the confusion, with his simple, disarming courtesy he
asked everyone to leave, closed the door of an improvised dress-
ing room and, surrounded by dozens of jackets and suits still to be
fitted, sat down and began this friendly chat with us from Ulisse.

Carlo, in tutte le interviste tu ti racconti sempre come “l’uo-
mo più normale del mondo”…
Si, e ci tengo molto!
Però il tuo non è il lavoro più normale del mondo e conduci
anche il programma più importante della televisione italiana!
Ma mica l’ho cercato! E per altro ho atteso che arrivasse il mo-
mento giusto: in passato c’erano stati altri avvicinamenti, ma
non avevo percepito la RAI unanimemente convinta a riguardo.
Quando invece l’anno scorso l’ho sentita convergere in toto sul
mio nome allora ho detto di sì.
Capisco che tu abbia accettato, capisco meno che tu abbia
accettato di rifarlo: il record di ascolti che tu stesso hai con-
seguito l’anno scorso rischia di essere il confronto più com-
plicato che tu possa avere, forse il tuo peggior nemico.
A giugno 2015 ricorreva il mio trentennale di collaborazione
con la RAI. La rete, in quell’occasione, mi ha fatto una propo-
sta che io ho vissuto come una dichiarazione di grande fiducia:
assegnarmi altri due Sanremo oltre a quello che avevo già rea-
lizzato confermandomene la direzione artistica, riconoscimento
che io considero ancor più significativo di quanto non lo sia la
conduzione. Potevo rifiutare?
È quindi poter scegliere le canzoni che ti ha convinto?
Sanremo è un festival di canzoni: la scelta dei brani è fonda-
mentale e ti racconto che per me è stato motivo di grande sod-
disfazione, più ancora degli ascolti TV. Il disco di platino vinto
dalla compilation di Sanremo 2015 è stato un evento che non
accadeva da anni.
E come scegli le canzoni?
Come quando facevo da direttore artistico in radio: cerco l’e-
mozione e un’orecchiabilità. Certo, anche io prendo le mie can-
tonate: ti ricordi i Kaoma con "Lambada"? Ai tempi, la scartai
perché a sentire quella fisarmonica pensai: «Ma che è questa
roba?». Ovviamente mi sono dovuto ricredere.
Anni fa, però, da Sanremo uscivano talenti che poi avrebbero
fatto il giro del mondo come Eros Ramazzotti o Laura Pau-
sini. C’è ancora questa risonanza internazionale?
L’album del gruppo Il Volo, il trio vincitore di Sanremo 2015, è

Carlo, in every interview you always describe yourself as “the
most normal man in the world”…
Yes, and that’s the way I intend to stay!
But yours isn’t the most normal of jobs in the world and you
present the most important program on Italian TV!
It’s not that I looked for it! Then again, I was really just waiting
for the right moment: in previous years I’d come close, but I
didn’t feel I had Rai TV fully behind me. But last year I got the
impression they were unanimous about me presenting the show
so I said yes.
We can understand you accepted, but a little less that you ac-
cepted to do it for the second time running: the record ratings
you achieved last year risks making a repeat performance a
bit more complicated, it could prove to be your worst enemy.
In June 2015 I celebrated thirty years of my career with Rai TV.
On that occasion the network made me an offer that I saw as a
great declaration of trust: assigning me another two editions of
Sanremo and giving me the art direction, an acknowledgement
that I consider even more significant than simply being its pre-
senter. How could I refuse?
So it was being able to choose the songs that convinced you?
Sanremo is a song festival: the choice of the songs is fundamen-
tal and I tell you that, for me, is extremely satisfying in itself,
even more than the ratings. The platinum disk the 2015 Festival
compilation album earned was something that hadn’t happened
for years.
And how do you choose the songs?
Just like when I was art director for the radio: I listen out for
the feeling and a catchy tune. Sure, I make some blunders too:
remember Kaoma with the Lambada? At the time I rejected them
because when I heard that concertina I thought: «what is this
stuff?». Obviously I had to change my opinion.
But , years back, Sanremo was the showcase for talents that
went on to tour the globe, like Eros Ramazzotti and Laura
Pausini. Does the festival still have that kind of international
influence?
The album by the band Il Volo, the winning trio at Sanremo 2015,
uscito in inglese e spagnolo e a me ha fatto molto effetto quando
i ragazzi mi hanno mandato dal Kodak Theater di Los Angeles il
filmato di loro che cantavano "Grande Amore" (il brano vincitore,
ndr) e tutti i presenti, compresi gli addetti ai lavori, applaudivano
in standing ovation.
Tu pensi che Sanremo possa svolgere un ruolo oltre confine?
Non solo Sanremo, ma la musica italiana tutta è ancora richiestissi-
ma nel mondo. Certo che se vogliamo esportare disco dance allora
la cosa diventa complicata come lo sarebbe se decidessimo di pro-
porci come ambasciatori del sushi nel mondo anziché della pizza.
Però alcuni dei nostri migliori chef nel mondo, pensa a Mas-
simo Bottura, non sono certo considerati tali per gli spaghetti
‘con la pummarola’…
Giusto, allora ti cito Bocelli, che con il suo ultimo disco ha messo
la tradizione del bel canto al servizio di alcuni standard inter-
nazionali. Questa commistione è la chiave di riuscita a livello
mondiale, come dimostrò diversi anni fa Pavarotti con il suo
“Pavarotti and Friends”. Insieme alla moda e alla cucina, noi
siamo conosciuti nel mondo anche per la musica. Guarda il caso
di Al Bano e Toto Cotugno nei Paesi dell’ex Unione Sovietica, o
di Laura Pausini e Tiziano Ferro in America latina.
Negli ultimi anni il Festival di Sanremo sembra più la vetrina
di lusso dei vincitori dei talent televisivi che non una fucina
di artisti destinati a fare il giro del mondo.
I vincitori dei talent vengono a Sanremo così come negli Anni
70 arrivava chi aveva avuto successo a “Canzonissima”. Do-
vremmo ghettizzarli? Il loro futuro dipende dal loro talento e
in questo senso il tempo è davvero galantuomo: chi ha qualche
cosa da dire continuerà. Non è la provenienza che va a decretare
il futuro dell’artista.
Che forma darai a Sanremo, visto che lo gestirai per altri
due anni?
È l’evento più seguito dell’anno e dimostra di essere la trasmis-
sione più guardata anche da parte di chi dice di non guardarla
(ride, ndr). Ma il suo futuro coincide anche con il suo passato:
è una gara di canzoni. Se gli diamo un significato diverso, com-
mettiamo un errore imperdonabile. E non vorrei commetterlo.

Do you think Sanremo has a role to play outside Italy?
Not just Sanremo, but Italian music in general is still in great
demand the world over. Sure, if we wanted to export disco dance
it’d be a tad more complex, like if we decided to propose ourselves
as ambassadors of sushi in the world rather than pizza.
But then some of our greatest international chefs, take Mas-
simo Bottura for example, aren’t considered as such for their
spaghetti and tomato sauce…
Too true, so I’ll quote Bocelli, who with his last record man-
aged to put the tradition of bel canto to great use in a series of
international standards. This kind of combination is the key to
international success, the kind Pavarotti enjoyed some years
back with his “Pavarotti and friends”.
Along with fashion and cuisine, we’re also well known in the
world for our music. Look at Al Bano and Toto Cotugno in the
former eastern bloc countries, or Laura Pausini and Tiziano
Ferro in Latin America.
In recent years the Sanremo Song Festival seems more like a
luxury showcase for the winners of TV talent shows than the
forge of artists destined for world-wide fame.
The winners of the TV talent shows come to Sanremo now just like
the winners of programs like “Canzonissima” did in the ‘seven-
ties. What should we do, ghettoize them? Their future depends
on their talent and in that sense time is the great equalizer: the
ones with something to say will go on. The future of an artist isn’t
dictated by where they came from.
What kind of form will you be giving Sanremo, seeing as you’ll
be managing it for the next two years?
It’s the most watched event of the year, and has proven to be the
most watched even by those who say they don’t watch it (laughs
– ed). Its future will follow on from its past: in the end, it’s a song
contest. If we make it into something else we’d be making an un-
forgivable mistake. And I don’t want to be the one who makes it.

opo averlo avuto ‘ospite’ con le sue favolose ricette per
tantissimi numeri, è venuto il momenrto di incontrarlo:
classe 1967, l’ideatore della cucina pop, che unisce
qualità e accessibilità. Tra i suoi maestri, Gualtiero Marchesi
e Alain Ducasse. Nel 2003 aprì il ristorante D’O a Cornaredo,
suo paese d’origine in provincia di Milano, e dopo un anno
le più autorevoli guide gastronomiche lo annoveravano fra i
grandi chef della cucina italiana.
Dieci anni dopo è stato invitato ad Harvard - primo e unico
chef ad avere questo onore - per raccontare la sua esperienza
imprenditoriale. Nominato Ambassador per Expo 2015, il
suo piatto “Acqua, zafferano e riso alla milanese D’O” è stato
uno dei simboli dell’esposizione universale. All’attività di
chef, affianca quella di designer. Tavoli, sedie, piatti, posate
e bicchieri sono ispirati alla sua filosofia pop: semplici, fun-
zionali ed eleganti.

THAN FOOD
After having had him as ‘guest’with his fabulous recipes in
numerous editions, the time has finally come to meet him:
class of ’67, creator of pop cuisine that combines quality
and affordability. Having learned from greats like Gualtiero
Marchesi and Alain Ducasse, in 2003 he opened the D’O
restaurant in Cornaredo, his home town in the province
of Milan and after just a year the most authoritative food
guides were ranking him among the greatest chefs of con-
temporary Italian cuisine. Ten years later he was invited
to Harvard (the first and only chef to receive this honour)
to share his experience as an entrepreneur. Named Ambas-
sador for Expo 2015, his dish “Water, saffron and Milanese
risotto D’O” was one of the symbols of the universal ex-
position. As well as a chef, he’s also a designer, designing
tables, chairs, dishes, tableware and glasses inspired on
the pop cuisine philosophy: simple, functional and elegant.

 Quanto contano, in cucina, cervello, palato, pancia e
cuore? Fuor di metafora: che peso hanno ragione, gusto,
bisogno e passione?
Il cervello conta il 90%. Un mio motto è: «Pensare prima di
comprare, pesare prima di cucinare». Non dobbiamo più parlare
di scarti, ma evitarli. Così si aiuta tutta la filiera: non si stressa
la terra, esasperata dalla sovrapproduzione, ma vuol dire anche,
all’estremo opposto, trovarsi nel piatto prodotti freschi. Poi, certo,
c’è il palato. Il gusto è ciò che fa star bene il cervello, permettendo
alla nostra parte razionale di lavorare meglio. Quando si parla di
pancia, si torna alla questione degli sprechi; la spesa va fatta a
pancia piena. Se sei affamato, azzanni qualunque cosa e rischi di
mangiare male. Infine il cuore, elemento passionale e creativo.
Nella vita quotidiana di tutte le persone conta essere passionali,
generosi e fare sacrifici.
Sei l’ideatore della cucina pop: puoi raccontarci com’è nata
questa tua filosofia?
È nata dal desiderio di amalgamare l’essenziale col ben fatto, il
buono con l’accessibile, l’innovazione con la tradizione. Dare
valore a tutti gli ingredienti e fare di stagionalità e alta qualità
dei prodotti due punti fermi. A questi ho aggiunto un altro prin-
cipio guida: la ricerca di un’armonia nell’equilibrio dei contrasti.
In ogni piatto può e deve coesistere tutto ciò che stimola il palato:
morbido, croccante, caldo, freddo, dolce, amaro... La mia filosofia
pop non nasce come replica della pop art di Andy Warhol, o della
musica pop. È sorta da una mia esigenza personale, del modo di
vivere che ho. Il pop in cucina è assolutamente più reale di una pop
art, che i non vedenti non possono apprezzare, ma anche di una
pop music, che i non udenti non possono ascoltare. Tutti quanti, al
contrario, dobbiamo mangiare. E, dunque, nulla più del cibo può
essere definito pop. Tutti noi siamo ‘popolo’, il mondo è il popolo.
A proposito di qualità delle materie prime, nel tuo ultimo libro
“Pop Foo’d”, edito da Feltrinelli, parli di cucina ‘non regionale’
italiana. Puoi spiegarci questo concetto?
La prima volta che l’ho detto, pensavano che mi
fossi sbagliato: «Volevi dire regionale?»
No, intendevo proprio non regio-
nale. Avevo solo in mente una
cucina rappresentata da

In the kitchen, how important is brain, palate, stomach
and heart? Metaphors aside, what weights do reason, taste,
need and passion have?
Brain accounts for 90%. One of my mottos is: «Think before
you buy, weigh before you cook». We never talk of waste, we
simply have to avoid it. That helps the whole system: we don’t need
to stress the land, exasperated as it is by overproduction, but that
also means, on the other hand, getting fresh products into our
dishes. Then comes the palate. Taste makes the mind feel good,
and allows our rational part to function better. When we talk about
stomach we go back the question of waste. Food shopping should
be done on a full stomach. If you’re hungry you jump at anything
and risk eating poorly. Lastly the heart, the passionate, creative
element. It’s important in the everyday lives of every one of us to
be passionate, generous and able to make sacrifices.
You’re the inventor of pop cuisine: can you tell us how this
philosophy of yours came about?
It came from a desire to amalgamate the essential with the well-
made, the good with the affordable, innovation with tradition.
Giving value to all the ingredients and making ‘seasonality’
and the quality of the produce into two cardinal points. To these
I added another guiding principle: the search for harmony in the
balance of contrasts. In every dish everything that stimulates the
palate can and must coexist: softness, crispness, hot, cold, bitter,
sweet... The pop in my philosophy isn’t the kind that’s in Andy
Warhol’s pop art or in pop music. It comes from my own personal
need, the way of life I have. Pop in cuisine is far more real than
pop in art, that a blind man can’t appreciate, or pop music, that
a deaf man can’t hear. Everyone has to eat, so, as I say, there’s
nothing more pop than food. We’re all ‘popular’, the whole world
is popular.
About the quality of the ingredients, in your latest book “Pop
Foo’d”, published by Feltrinelli, you talk about ‘non-regional’
Italian food. Can you explain this concept to us?
The first time I introduced the idea, people thought it
was a mistake: ‘You meant regional?’ ‘No, I
meant exactly what I said, non-region-
al’. All I had in mind was a kind
cuisine represented purely by
quality ingredients. Just
think of all the unique
products we can find
 trovare nel nostro Paese, da Nord a Sud: il tartufo d’Alba e
quello di Norcia, la cipolla di Tropea o quella di Cavasso, le alici
liguri e quelle campane... la ricetta è il mezzo per una buona
e sana nutrizione, ma ciò che fa veramente la differenza sono
la qualità degli ingredienti, i corretti metodi di lavorazione e
cottura e le quantità attente ai nostri stili di vita. Il mio ‘non regio-
nale’ non nega, ma afferma. Faccio fatica a pensare che due buoni
prodotti - raccolti in zone differenti, nella stagione giusta e cotti in
modo adeguato - una volta impiattati non siano entrambi gustosi.
Ecco perché cucina ‘non regionale’: semplicemente, perché una
e unita dall’eccellenza dei prodotti.
Una domanda per i passeggeri di Alitalia che viaggiano in tut-
to il mondo: come riconoscere, all’estero, una buona cucina
italiana?
Dipende tutto dai profumi e dai sapori della cucina italiana con
cui uno è cresciuto, da quello che hai mangiato in casa da piccolo
e da quello che mangi adesso abitualmente. Su questa base si può
poi giudicare tranquillamente se quella che si mangia lontano
dal Belpaese sia una buona cucina italiana. C’è da dire che oggi,
rispetto a 25 anni fa, nel mondo ci sono tanti buoni ristoranti
italiani. O, meglio, che si sono formati molti cuochi italiani che
fanno una grande cucina. Più che definirla italiana, io la chiamerei
però cucina del prodotto italiano.
Quali sono i progetti futuri per il D’O, che per molti è ormai
da tempo uno dei templi della grande cucina? E quali sono i
progetti futuri del suo fondatore e chef?
Per il D’O posso solo anticipare che a breve apriremo, a poche
decine di metri di distanza dalla sede attuale, un nuovo, più ampio
e affascinante locale. Non voglio svelare i dettagli, ma il nuovo
D’O si svilupperà su due livelli e avrà anche uno spazio per ricerca
e sviluppo. Sul fronte internazionale, non manca molto all’apertura
di un mio ristorante a Manila, nelle Filippine: si chiamerà Foo’d e
sarà all’interno di un hotel della catena Shangri-La.
Hai già individuato il nuovo Davide Oldani?
No, non ci sarà un nuovo ‘Davide Oldani’, perché ognuno ha la sua
storia e la sua cifra. Ci sarà un nuovo chef, auto-
re di un suo peculiare percorso dopo aver
appreso le basi della grande cucina.

in our Country, from North to South: the truffles of Asti and
Norcia, the onions of Tropea and Cavasso, the anchovies of
Liguria and Campania... the recipe is the vehicle for good,
healthy nutrition, but what really makes the difference is the
quality of the ingredients, using the right methods in prepara-
tion and cooking and the right quantities for our lifestyles. My
‘non-regional’ concept doesn’t renounce, but affirms. I find it hard
to think that once served in a dish two good products, gathered
in different regions in the right season and prepared in the right
way, can’t both be excellent. That’s what ‘non-regional’ cuisine
is: simply created by the excellence of the products, regardless
of region.
A question for Alitalia passengers travelling the world: how
can you recognise good Italian cuisine when you’re abroad?
It all depends on the aromas and the tastes of Italian cuisine
you’re brought up with, from what you ate as a child to what you
habitually eat now. Based on that it’s easy to judge whether what
you’re eating outside the Belpaese is good Italian cuisine. One
thing’s certain, there are far more excellent Italian restaurants
in the world now than there were 25 years ago. Or better, there
are more Italian chefs making excellent cuisine. Rather than
defining it Italian, I’d call it the cuisine of Italian produce.
What are your future plans for D’O, which for many has become
one of the temples of grand cuisine? And what are the future
plans of its founder and chef?
For D’O I can only say that shortly we’ll be opening a new, larger,
fascinating restaurant quite close by the original. I don’t want
to give away any details, but the new D’O will be on two levels
and will even have a space for research and development. On the
international front, I’m soon going to be opening a restaurant in
Manila, in the Philippines: it’s going to be called Foo’d and will
be in one of the Shangri-La chain hotels.
Have you already found the new Davide Oldani?
No, there’s not going to be a new ‘Davide Oldani’, because every-
one has their own story and style. There will be a new chef though,
who’ll make his own tracks after learning the basics of
grand cuisine. On my team I mean people like
Wladimiro Nava and Alessandro Proco-
pio, but I’d also mention Diego Fer-
rari, who’s in London at present.

E in fondo aveva ragione: tutti, ma proprio tutti abbiamo una vita
segreta. Non fate quella faccia, pensateci bene… Non mi dite che
non avete niente da nascondere! Certo ognuno di noi ha un segreto
diverso, dal più piccolo e innocuo a quello più inconfessabile.
Questo è lo spunto di partenza di “Perfetti sconosciuti”. Un film su
ciò che nascondiamo, che non vogliamo confessare o non possiamo
rivelare. Su ciò che a volte è scomodo, sulla paura di rivelarci e sul

got nothing to hide! Sure, we’ve all got different secrets, from the
smallest, innocuous ones to the truly unmentionable.
That’s where the idea for “Perfetti sconosciuti” came from. A film
about what we hide, what we don’t want to admit or can’t reveal. About
things that sometimes are compromising, about the fear of revealing

timore di accettarci. Ma per fare un film, uno spunto non basta,
anche se interessante. Ci vuole un punto di vista, trovare la giusta
angolazione. E così nasce questa idea. Semplice, quasi scontata.
Il cellulare!
Ecco oggi dove è nascosta la vita segreta delle persone, nel cellulare.
Lì dentro ormai ci abbiamo messo tutto, forse troppo. Quest’og-
getto è ormai diventato la ‘scatola nera’ della nostra vita, per usare
un termine familiare a noi viaggiatori. Un tempo la vita segreta
era ben protetta nella nostra memoria, oggi, invece, nelle nostre
sim card. E allora pensate: cosa succederebbe se quelle minuscole
schede parlassero? Lo scopriranno i protagonisti, durante una cena
tra amici. Quattro coppie che cadono vittime di un gioco diabolico,
una spietata quanto crudele ‘roulette russa’, dove ognuno dovrà
mettere sul tavolo il proprio cellulare e per tutta la cena i messaggi,
Whatsapp, le chiamate e Facebook varranno condivisi con tutti. Chi
è senza peccato risponda per primo!

That’s where the secret lives of people are hidden, in their phones.
We’ve put practically everything, perhaps even too much, into
them. This device has now become the ‘black box’ of our lives, to
use a term familiar to us air travellers. Once upon a time secret
lives were hidden in our memories, now they’re in our sim cards.
So just think what would happen if those little cards could talk.
The characters in the film find out at a dinner with friends. Four
couples that fall victim to a diabolic game, a ruthless and cruel
Russian roulette in which each one has to put their phone on the
table and share all the messages, Whatsapps, calls and Facebook
with everyone for the whole evening. He (or she) who is without
sin cast the first phone!

A
lla vigilia del Festival della Canzone Italiana di Sanremo, in-
contriamo a Milano il compositore/pianista Giovanni Allevi,
per scambiare qualche opinione sulla musica e sul suo lavoro.
Giovanni, tuo padre era un insegnante di musica. Eppure per
te il pianoforte di casa era off limits.
Mio padre era insegnante di solfeggio e clarinetto ad Ascoli Piceno
dove vivevamo. A casa c’era un pianoforte che ovviamente papà
suonava, ma a me era fatto divieto di avvicinarmi. Per me quel
pianoforte era chiuso a chiave. Per mia sorella maggiore, invece no:
lei lo poteva suonare. Ricordo che la ascoltavo da dietro la porta.
Sta di fatto che mio padre con questo divieto aveva scatenato in me
una sorta di ossessione.
E quando s’innescò quest’ossessione?
Già alle elementari: facevo il tempo pieno. Rientravo da scuola alle
16.30 e il pensiero era di tornare per guardare il pianoforte.
Hai quindi dovuto convincere tuo padre…
Sì, in un certo senso sì, e questa è stata una difficoltà non da poco:
era come se avessi non solo il pubblico normale che hanno tutti
i performer ma anche mio padre che da solo costituiva un intero
pubblico. E poi il pubblico accademico che è stato una sorta di io
genitoriale, una sorta di super io paterno. Ora mio padre è il mio più
grande fan e sostenitore.
Perché fai questo parallelismo tra figura paterna e mondo ac-
cademico?
A casa mia non c’era l’idea giocosa del “adesso vi suono qualche
cosa” come può succedere il pomeriggio di Natale con tutti i parenti
a pranzo. C’era un’idea di grande sacralità, perché la musica era Arte
con la a maiuscola e andava rispettata. Per me quindi suonare non
è stato solo ribellarmi al divieto di mio padre ma anche all’idea di

On the eve of the Sanremo Song Festival, we met composer/
pianist Giovanni Allevi in Milan to exchange opinions on music
and talk about his work.
Giovanni, your father was a music teacher. And yet for you the
home piano was off limits.
My father taught sol-fa and clarinet in Ascoli Piceno where we
lived. There was a piano in the house, which papà obviously
played, but it was forbidden for me to lay hands on it. For me
that piano was locked.
But for my big sister it wasn’t, she could play it. I remember
listening to her behind the door. The fact is, with this ban my
father triggered a sort of obsession in me.
And when did this obsession actually trigger?
Already at primary school: I attended full time. I’d get home from
school at half past four just dying to get home to look at the piano.
So you had to persuade your father …
In a certain sense, yes, and it wasn’t an easy thing to do: it was
as if I had not only the normal audience all performers have,
but my father as well who was an entire audience in himself.
And then the academic audience that was a like a parental Id,
a sort of paternal super-ego. But now my father is my greatest
fan and supporter.
Why do you draw this parallel between the paternal figure and
the academic world?
In my house there wasn’t the joyful idea of “now I’ll play you
something” like what normally happens on a Christmas after-
noon with all the relatives to lunch. It was a far more sacred
thing, because music was Art with a capital “A” and demanded
respect. So for me, playing wasn’t simply a rebellion against my

un’arte così intimorente. Queste dinamiche si sono poi riproposte
nel mio rapporto con il mondo accademico.
Ovvero?
Così come io sono il figlio di mio padre, artisticamente sono anche
figlio del mondo accademico perché mi sono diplomato in com-
posizione al Conservatorio Giuseppe Verdi di Milano. Ma per far
emergere la mia identità è come se avessi dovuto commettere una
sorta di parricidio, come quello intellettuale di Platone nei confronti
di Parmenide: non posso fare a meno di riconoscere mio padre (e
quella formazione classica/tradizionale) come generante ma non
posso riproporla.
Qualcuno ha detto di te che sei “l’idolo colto del popolo rock”.
Detta così suona come se tu fossi il punto basso della cultura alta
e il punto alto del gusto popolare.
Ecco siamo entrati nel campo minato! Perché per me non esiste un
punto alto e uno basso. Non c’è il gusto del popolo e quello elitario.
Questo distinguo autoreferenziale l’ha inventato l’élite per confer-
mare di essere un gradino sopra. Però ci tengo a precisare una cosa:
io non ho colpa di non piacere alla critica (ride, ndr).
E allora perché a te è capitato e ad altri no?
Perché sono stato coraggioso (ci pensa in silenzio, ndr): il gabbiano
Jonathan ha avuto il coraggio di riconoscere che il suo obiettivo
non era quello di mangiare e basta, ma quello di volare il più in alto
possibile, cioè il coraggio di riconoscersi, di inseguire la propria
inclinazione. Il coraggio di non combattere contro se stessi.
E questa cosa la maggior parte delle persone non la fa?
Io non so cosa fanno gli altri, faccio già fatica a capire cosa faccio
io! Ma mi rendo conto che in un ambiente accademico/artistico è
più facile piegarsi alle aspettative esterne che affermare la propria
indole e la propria unicità. Io credo di avere avuto questo coraggio.

Meaning?
Just as I am the son of my father, in an artistic sense I’m also a
child of the academic world because I graduated from the Gi-
useppe Verdi Conservatory in Milan. But to allow my identity to
emerge I had to commit a sort of parricide, like the intellectual
one of Plato against Parmenides: I cannot but acknowledge my
father (and that classical/traditional training) for making me
what I am, but I can’t endorse it.
People have said that you’re “the cultured idol of the rock
population”. Put like that it’s as if you’re the lowest point of
high culture and the highest point of popular culture.
Now we’re getting into a minefield! Because for me there’s no
low point or high point. There’s no popular taste or elitist taste.
This self-referential distinction was invented by the elite just to
confirm they’re one step higher. But I’d like to stress one thing:
it’s not my fault the critics don’t like me (laughs, ed).
And so why does this happen to you and not others?
Because I was brave (thinks in silence, ed): Jonathan Livingstone
Seagull was brave to acknowledge that his purpose wasn’t simply
to eat and that’s all, but to fly as high as he could, I mean, the
courage to acknowledge yourself, to pursue your own inclina-
tions. The courage not to fight against yourself.
And is that something most people don’t have?
I can’t speak for others, I already find it hard just understanding
what I’m doing myself! But I do realise that in an academic/
artistic context it’s perhaps easier to bend to external expecta-
tions than to affirm your own nature and uniqueness. I think I
had that courage.

Nessuna. Parabola e decoder
(o CAM) sono spese una tantum.
Una volta attivata la smartcard la
visione è gratuita e per sempre, senza

> Cosa si vede su tivùsat?
Oggi con un decoder tivùsat l’utente
può vedere 69 canali nazionali ed
internazionali, più altri centinaia
provenienti da tutto il mondo.
Tra questi spiccano gli all news
Euronews, BBC World News, CCTV
News, France 24, Al Jazeera, Deutsche
Welle e NHK.
> Ci sono canali in HD?
tivùsat ne ha visto crescere in questi
anni il numero. Ad oggi sono sette quelli
disponibili: Rai 1, Rai 2 e Rai 3 HD, che
propongono l’intera programmazione
dei tre canali generalisti Rai in HD;
Rai sport 1 HD e SuperTennis, con le
dirette di importanti eventi sportivi
nazionali ed internazionali; e ancora due
canali internazionali: il franco-tedesco

Devo correggerla, non abbiamo nessun
abbonamento mensile. Parliamo di utenti

Negli anni lo sviluppo di tivùsat è stato
rapido e il servizio è stato apprezzato
da milioni di famiglie: nel 2011, a soli due
anni dall’avvio, il servizio raggiungeva
il milione di smartcard attivate. Nel
novembre 2013, a poco più di quattro
anni dal lancio, tivùsat tagliava il
traguardo dei due milioni.
Ad oggi ci sono state più di due milioni
e 600mila attivazioni: più dell’8 per
cento delle famiglie, un patrimonio di
circa 6 milioni di telespettatori italiani.
> Ci sono esperienze simili a tivùsat in
Europa?
L’Italia non è il solo Paese europeo
dove è nata una piattaforma satellitare
gratuita. In Gran Bretagna è infatti
presente Freesat, società nata per
iniziativa della Tv pubblica BBC e di
quella commerciale ITV: ad oggi Freesat
raggiunge 1,9 milioni di famiglie ed è
una realtà consolidata nel panorama
televisivo britannico. In Francia la Tv
satellitare si pùò vedere gratuitamente
con Fransat e in Germania è presente HD
Plus, una piattaforma che punta molto
sull’offerta HD.

Siamo in pieno recupero degliAnni 90,

tutte le band del movimento Shoegazer

continuo delle pedaliere). Il loro sound
era un incrocio tra psichedelia, pop e
post punk. Un mix adesso attualissimo.
Seeing as we’re in the midst of a
‘Nineties revival, we simply have to
pay a tribute to all the bands from
the Shoegaze movement (they’re not
gazing at their shoes ‘cause they’re
shy, but ‘cause they’re always star-
ing at their effects pedals). Their
sound is a cross between psychede-
lia, pop and post punk. Ultracontem-

rezzo competitivo e dotazione di alto livello per la nuova
berlina per famiglia. La nuova Tipo conquista il premio più
ambito indetto da Autobest. A eleggerla una giuria inter-
nazionale composta da 26 giornalisti specializzati di altrettanti
Paesi europei. Più di mille vetture vendute nel primo weekend
di dicembre e un successo di pubblico: 6 mila test drive, 20 mila
visitatori. E anche nei fine settimana successivi la casa ha rinno-
vato “il porte aperte”. La Fiat Tipo sta piacendo. E ci sono molte
ragioni che spiegano un’accoglienza tanto calorosa all’indirizzo
di una vettura per molti versi inaspettata.
Tanto per iniziare, riappare sulla scena una tre volumi di dimen-
sioni compatte. Un genere di cui la Fiat è stata maestra (in quante
famiglie non è entrata almeno una 128, una 124, una 131?) e
che negli ultimi tempi era sembrata diventare appannaggio dei
marchi premium. Reinventare la berlina tradizionale con il vano
bagagli separato dall’abitacolo è stata una proposta talmente
inattesa che la gente si è lasciata attrarre dal messaggio.
Nel passato molte tre volumi sono nate come derivazione di una
hatchback. La Tipo è invece stata pensata fin dal foglio bianco per
essere una sedan, termine angolosassone che identifica questo
genere di carrozzeria. Il terzo volume ce l’aveva fin dal primo
schizzo, e si vede dall’armonia delle linee.
La Tipo ha un’abitabilità vera per cinque persone, ai vertici della
categoria. Merito del passo lungo: 2 metri e 64 centimetri, del
pianale regolare anche nella parte centrale della seconda fila e
del suo vano bagagli da 520 litri. E c’è spazio per la vita di

come per un acquisto all’Ikea. E ovviamente anche per gli sci.
Il claim pubblicitario è diretto e onesto: ci vuole poco per avere
tanto. Il poco è il prezzo richiesto (12.500 euro) in cambio del
tanto rappresentato dalla dotazione di serie della versione Ope-
ning Edition con motore 1.4 benzina da 95 cv: clima automatico,
sensori di parcheggio (due contenuti che nessuna concorrente ha
di serie, in questo segmento di mercato, nella versione d’attacco),
sei airbag, controllo di stabilità, cerchi in lega da 16 pollici, radio
con Bluetooth e comandi al volante, quattro alzacristalli elettri-
ci, fendinebbia. La Opening Edition Plus aggiunge telecamera
posteriore, sensori luci e pioggia, UConnect (radio e navigatore
con schermo da 5 pollici), cerchi da 17 pollici, volante in pelle,
sedile guida con regolazione lombare, bracciolo posteriore.
Quel che più conta è che i 12.500 € non sono un prezzo civetta ri-
ferito a una versione d’attacco dalla dotazione improbabilmente
semplificata ma, appunto, danno accesso al mondo Tipo e a tutti
i contenuti che avete appena letto: quelli di una segmento C full
optional, al costo, però, di una segmento B. La Opening Edition
1.6 Multijet costa 16.500 €, e sono necessari 1.200 € in più per
passare alla Opening Edition Plus abbinata esclusivamente al
diesel. Anche l’articolazione così razionale della gamma, con
due motorizzazioni, due versioni, due disegni dei cerchi, una
configurazione d’interni è sinonimo di semplicità e trasparenza.
La Tipo ha una qualità percepita elevata, grazie al fatto che è
stata realizzata con le logiche industriali del World Class Ma-
nufacturing. Basta provare la Fiat Tipo per capire che cosa
significa, nel concreto, tutto questo.

La giuria internazionale di Autobest -
organizzazione indipendente nata nel 2001 - ha
assegnato il titolo "Autobest 2016" alla nuova Fiat
Tipo confermando tutte le sue doti. A eleggerla
una giuria composta da 26 giornalisti specializzati,
in rappresentanza di altrettanti Paesi europei che
complessivamente corrispondono al 91% della
popolazione continentale. Una conferma della
bontà di questa nuova automobile che anche
secondo gli esperti ha tutti gli ingredienti necessari
per soddisfare il cliente: design, motorizzazioni,
qualità percepita, comfort, versatilità e ottimo
rapporto qualità/prezzo. Con la straordinaria
vittoria della nuova Tipo salgono a tre i modelli
Fiat che hanno vinto l'ambito titolo, un record tra i
marchi partecipanti ad Autobest: prima era toccato
alla Panda (2003) e poi alla Linea (2008).

FIAT TIPO SO MUCH FOR SO LITTLE
Competitive price and high level standard features for the new
family saloon from Fiat, the new Tipo that has just received
Autobest’s most coveted prize, awarded by a jury made up of 26
specialist journalists representing equally as many European
countries.
More than a thousand cars sold in the first weekend of December
and a great success with the public: 6 thousand test drives, 20
thousand visitors. And even over the weekends that followed, Fiat
kept up with its “open door” policy. People are liking the Tipo.
And there are a lot of good reasons that explain the exceptionally
warm welcome this surprising car has received.
For starters, it reopens the market for the compact saloon.
A genre in which Fiat has always been the maestro (how many
families haven’t owned a 128, a 124 or a 131?), but that in recent
times has seemed more the sign of an economy car. Reinventing
the traditional saloon with separate boot was a very audacious
move that seems to have struck a chord with a lot of people.
Unlike most of its rivals that are converted from existing
hatchbacks, the Tipo was designed from the outset as a saloon,
with the boot included right from the first design sketch. And it
shows in the harmony of the car’s lines.
The Tipo is a real five-seater, at the top end of its category. Thanks
being to its long wheelbase: 2 metres 64 centimetres, so plenty
of legroom even for the centre-rear passenger. The boot is a si-
zeable 520 litres offering plenty of space for all family activities,
from vacations to the supermarket and even for your purchases
from Ikea. That means it easily accommodates your skis as well.
The advertising claim is direct and honest: so much for so lit-
tle. The little is the impressively low price (12,500 Euros) in
exchange for the much that includes the standard features of
the Opening Edition version with its 95 HP 1.4 petrol engine:
automatic climate control, parking sensors (two features that
none of its competitors in this market segment offer as standard,
in their entry versions), six airbags, stability control, 16” alloy
wheels, Bluetooth radio with steering wheel controls, four elec-
tric windows and fog lights.
The Opening Edition Plus adds a rear view camera, twilight
and rain sensors, UConnect (radio and 5” screen navigator),
17” wheels, leather steering wheel, lumbar adjustment for the
driver’s seat and rear armrest.
What really counts though is the price, at 12,500 Euros that
isn’t just bait for the launch version with improbable simplified
features but, as we said, all the content we’ve just listed, just like
a C segment full optional but at the price of a B. The Opening
Edition 1.6 Multijet costs 16,500 Euros, and it takes 1,200 €
more to move up to the Opening Edition Plus, only available
with a Diesel engine.
Even the rational structure of the range, with two engines, two
versions, two wheel designs and one interior configuration is
another sign of simplicity and transparency.
The Tipo has an exceptional quality-price ratio thanks to the
fact it was designed and built with the industrial logic of World
Class Manufacturing in mind. Take the Fiat Tipo for a test drive
and you’ll understand what all this means, in concrete terms.
