Unit of Competency: WELCOME GUESTS AND TAKE FOOD AND


BEVERAGE ORDERS
Title: Welcoming Guest and Taking Food and Beverage Orders
Performance Objective:
Given the necessary tools and materials the trainee will be able to
welcome guest and take food and beverage orders within 30 minutes.

Supplies/Materials: Menu card, Pencil, Notepad, Blank Order Slips


Equipment: Computer

Step/Procedure:

 Wear your proper PPE

1. Guest Greeting
1.1 Acknowledge new guests as soon as they arrive (smiling)
1.2 Approach the guests with an appropriate welcome
2. Ask the guest whether they have made any reservation.
2.1. If a guest had a reservation , ask them booked under
whose name
2.2 If they don’t have any reservation creates a walk-in
reservation and allocates the guest to the available table.
2.2-1 Ask them either they would like to have buffet or A
la carte
2.2-2 Don’t forget to ask them either they are smoking
or not (some restaurant had smoking and non smoking section)

3. .Show the guest to their seat


3.1 Pull back the chair of guest
3.2 Unfold the table napkin and laid it to the lap of the
guest

4. Take food and beverage orders


4.1 Offer refreshments to the guest
4.2 Show the menu card
4.2-1 Up sell items on the menu like “specialty” and
side dishes.
4.3 Ensure the guest is ready to order
4.4 Take the order of the guest from their right hand side,

move anticlockwise or clockwise round the table.


4.5 Hear carefully to what the guest said and write it down
and note any special request.
4.6 After the guest finished ordering the meal repeat the
order.
5. Transfer the order to the kitchen.
