Observation: (CORRECTED DURING INSPECTION): Unapproved Majestic brand bleach is used as sanitizer
for food equipment. No approved sanitizer is available in the facility.
Corrective Action(s): Provide an approved sanitizer for use . Action Taken: Owner purchased an approved
chlorine sanitizer to use with food contact surfaces.
Code citation: Chemical SANITIZERS and other chemical antimicrobials applied to FOOD-CONTACT
SURFACEs shall meet the requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert
ingredients for use in antimicrobial formulations (food-contact surface sanitizing solutions).

6-501.12 - CLEANING, FREQUENCY AND RESTRICTIONS
Observation: The floor beneath the wok is soiled with build-up along the wall.
Corrective Action(s): Deep clean the floors and maintain in a clean condition. Clean the physical facilities at a
frequency necessary to keep them clean. CORRECT BEFORE THE NEXT INSPECTION.
Code citation: (A) The physical facilities shall be cleaned as often as necessary to keep them clean.
(B) Except for cleaning that is necessary due to a spill or accident, cleaning shall be done during periods when the
least amount of food is exposed such as after closing.
