I. INTRODUCTION

1.1 Background and Problem

- Tofu industry in Indonesia is abundant (the number of large industries: 3,952


units while the number of small industries registered at the Ministry of Industry
and Trade: 40,378 units).

- Tofu industry liquid waste is relatively high (whey) from tofu industry
throughout Indonesia reaches 19,575,000 tons per year).

- Tofu industry (Whey) liquid waste is largely untapped.

- Tofu liquid waste is discharged directly into the waters (causing a foul odor and
polluting the environment due to high levels of organic pollutants).

- The protein content of the liquid waste of tofu reaches 0.42% (Fatha, 2007).

- Soy Whey Concentrate is beneficial for health (meets protein intake, accelerates
muscle growth).
- Tofu liquid waste can be processed into soy whey concentrate.

- There is no utilization of tofu liquid waste into Soy Whey Concentrate


(problem).

I.2 Purpose

Utilizing the protein content in the liquid waste of tofu industry into soy whey
concentrate.

1.3 Mind Framework

- There is no utilization of tofu liquid waste into Soy Whey Concentrate.

- Tofu industry liquid waste is abundant and pollutes the environment.

- Tofu liquid waste can be processed in WWTP (Wastewater Treatment Plant) to


meet the standard quality standards of tofu liquid waste that can be discharged
into the waters or taken the protein from tofu liquid waste into soy whey
concentrate.

- Tofu industry liquid waste will be utilized as soy whey concentrate.

1.4 Hypothesis

Tofu industry liquid waste can be utilized as a Soy Whey Concentrate.

I. INTRODUCTION

1.1 Background and Problem

Tofu industry in Indonesia is abundant, the number of large tofu industry is 3,952,
while the number of small industries registered at the Ministry of Industry and
Trade is 40,378 units. This results in relatively high tofu industry liquid waste.
Wastewater from the tofu industry throughout Indonesia reaches 19,575,000 tons
per year. Tofu industry's vast amount of liquid waste (whey) is largely untapped
and is usually discharged directly into the water causing a foul odor and polluting
the environment due to high levels of organic pollutants (Faisal, 2016).

The protein content of the liquid waste of tofu reaches 0.42% (Fatha, 2007).
Based on the total amount of liquid waste from tofu industry in Indonesia, around
82,215 tons of protein are wasted. If the protein in tofu wastewater is used, then
this protein will have high economic value. In addition, if the protein in tofu
industry wastewater is used, it will reduce environmental pollution by tofu
industry liquid waste. Protein produced from tofu industry wastewater treatment is
called soy whey concentrate (SWC).

Soy whey concentrate (SWC) is beneficial for health. SWC is able to meet protein
intake, accelerate muscle growth, and repair damaged human body tissue in
accordance with protein function. The problem is, in Indonesia there is no
utilization of tofu liquid waste into SWC. Therefore, this research is important to
be done to utilize tofu liquid waste into SWC.

1.2 Purpose

The research objective is to obtain Soy Whey Concentrate from tofu wastewater
treatment. By using two methods, that is using spray drying and vacuum oven
drying.
