ABSTRACT

Batuan is an indigenous and underutilized fruit in the Philippines. Commonly, Batuan


used for souring local dishes. Beverages are a part of the people’s lifestyle. Commercially
batuan fruit into beverage or juice (ready-to-drink) had benefits for increase economic value
of batuan fruit. This study examines the determinants of the water ratio for ready-to-drink
juices. This research formulated five treatment between batuan extract and water ratio (1:1,
1:3, 1:5, 1:7 and 1:10). The value of batuan ready-to-drink juice for pH ranged from 2.1 to
2.4, for TSS values ranged from 11.4 to 12.4 oBrix, for TTA ranged from 0.05 to 0.28%, for
viscosity ranged from 1.67 to 1.99 cP and for vitamiin C ranged from 10.45 to 69.23
mg/100ml. The sensory analysis showed the most preferred treatment between batuan extract
and water ratio was 1:3. The results indicated that the instensity of color, consistency and off-
flavor of batuan ready-to-drink juice was higher than batuan puree, It follows that for the
blends as the water ratio is increased of the TTA, TSS and pH also increase as observed in
the chemical analysis of the juice. Results also showed for sensory analyzed was significance
difference for color, aroma, flavor, sweetness, sourness and general acceptability.

This research paper was a part of special problem under supervision of food science cluster, college of
agriculture, university of the philippines los banos. This paper intended to researchers, students and
professionals to share thought and findings on a wide range of topics relating to utilization of local or
