Review of Literature The following review of related literature and studies are presented below to further
support this study and hence could contribute for the depth understanding of the readers
and future researchers.
Menu Planning
Bell and Swinburn 2004 described menu planning as the process of deciding what you
will eat for each meal, including main dishes, side dishes, and desserts. It also entails
knowing how many meals to plan for and when to serve them. Daily activities and
scheduling variations may complicate the menu planning process. Knowing what types of
foods can be prepared according to the activities and schedules for a particular day are
an important part of meal planning.
This was further supported by Conrad et.al (2018) that there should be five criteria for
meals to be applied for all settings with regard to serving of fruit and vegetables, fish,
wholegrain product and high fat meat and dairy products. Maximum serving of non-
wholegrain products, whereas workplaces were more likely to comply with criteria on,
e.g., minimum fruit and vegetable content and serving of fish. In addition, specific
characteristics, e.g., serving system, were found to predict compliance with some of the
criteria. These findings highlight the need to address differences in canteen
characteristics when planning implementation support for both guideline and food waste
reduction initiatives.
According to Hoffman et.al (2015), the school food environment plays an important role
influencing food choices of students. Unhealthy foods sold at school canteen contribute
to an obesogenic environment. Therefore, menu planning is very vital not only for
individuals who are dieting but to school canteens where students and employees eat
their daily food. Failure to serve a healthy diet for the students may result in problems of
growth and development for them, and may adversely affect their schooling. Studies have
demonstrated the link between the eating pattern of students and the serving of school
food. Most of the foods served in school canteen are snacks that are energy-rich and
nutrient-poor. The popular school food choices are often of low nutritional value.

The estimated overweight amongst students in Asia in 1995 by the World Health
Organisation (WHO) was around 2.9%, and it has risen to around 15% among the
overweight in Africa, Asia, and the Eastern Mediterranean, according to Jaime (2009).

Significance of the Proposed This study will investigate whether ISAP employees and students are satisfied with the
Study menu planning and food preparation of the school canteens. The findings of this study will
not only add to the current base of knowledge but further support the improvement of the
school canteens in ISAP for the welfare of the employees and of the students.

Methods Research Methods
This chapter presents the research design, the respondents, data gathering tool, data
gathering procedure, and the statistical treatment of the data.

Research Design
This research will use quantitative approach following the descriptive correlational
research design. It is a descriptive survey design for it aims to describe the menu
planning and food preparation of ISAP Canteen and it’s a correlational design on its aim
to correlate the two variables of study.
Respondents of the study
In this study, the respondents involve are the ISAP Faculty Members and the students of
the main ISAP Campus.
Data Gathering Tool
The descriptive survey questionnaire will be used as the main-data-gathering-instrument
for this study. The questionnaires will be divided into two main sections: A profile and the
survey proper. The profile contains name, age, position and civil status. The survey
proper will explore the respondents’ preferences on menu planning and food preparation
among the employees especially the ISAP Faculty Members.
Data Gathering Procedure
This study will be using a descriptive survey type of questionnaire to gather
information. This survey is using suitable formulated structured questionnaires from the
researcher. Questionnaires will be floated to the respondents regarding the menu
planning and food preparation among ISAP Faculty Members and students. After
gathering all the completed questionnaires from the respondents, total responses for
each item will be obtained and will be tabulated.
Statistical Treatment of Data
The researchers in this study will be using the statistical method in survey research, this
means, the collection and analysis of responses of large samples of people to polls and
questionnaires design to elicit their opinions, attitude and sentiments about a specific
topic. The statistical tools will be used are frequency count and percentage distribution,
ranking, Pearson-r and ANOVA.
