Purpose:

To maintain Personal hygiene conditions adhering to the Prerequisite Program and follow the
same to improve food safety standards.

Scope:

This SOP covers whole production site of ZIPPY EDIBLE PRODUCTS PVT LTD. especially,

product handlers.

Responsibility:

FSTL, Quality In charge

Procedure:

Personal hygiene covers below mentioned point-

Health Status:

People known, or suspected, to be suffering from, or to be a carrier of a disease or illness


likely to be transmitted through food, is not allowed to enter any food handling area if
there is a likelihood of his/ her contaminating food. Any person so affected reports the
illness to the concerned area Supervisor.

Medical examination of food handlers is taken up whenever there is prevalent epidemic


or, on regular intervals of 1 year. Records of the same are available with the FSTL.

Illness & Injuries:

Conditions which need medical examination and/or possible exclusion from food handling
and are considered include:

• Jaundice;
• Diarrhea;
• Vomiting;
• Fever;
• Sore throat with fever;
• Visibly infected skin lesions (boils, cuts, etc.);
• Discharges from the ear, eye or nose.

Personal Cleanliness:

Food handlers are trained to maintain a high degree of personal cleanliness and, are
required to wear suitable protective clothing, head covering, and footwear, when in
process areas. Cuts and wounds, where personnel are permitted to continue working, are
covered by suitable waterproof dressings. Food handlers follow all the personal hygiene
rules and regulations which are displayed at prominent locations and entry points. Some
of the instructions include washing of hands at the following:
• at the start of food handling activities;
• immediately after using the toilet; and
• after handling raw food or any contaminated material, where this could result in
contamination of other food items.

Personal Behavior:

People engaged in food handling activities are trained to refrain from behavior, which
could result in contamination of food, for example avoiding:
• smoking;
• spitting;
• chewing or eating;
• sneezing or coughing over unprotected food.

Personal effects such as jewelry, watches, pins, threads or other items are not to be
worn or brought into food handling areas if they pose a threat to the safety and
suitability of food.

Hygiene Training:

The FSTL arranges training sessions for food handlers in which topics include:
1. Personal Hygiene
2. Safe Food Handling
3. Points of contamination and safe overcoming
4. Recent changes in recipe.

Protective Clothing:

Protective clothing used in plant premises as per product category, requirement and risk
in product are- For employees-Uniform, safety shoes, goggles, ear buds, snood covers,
mask & helmet & for visitors-Helmet, mask & ear buds.
